How to make Chocolate and Vanilla Cookies? Simple Valentine’s Day Cookies

We all face that dilemma at least once in our life time…will it be chocolate or will it be Vanilla 🙂 Worry not friends, today I present to you, best of both worlds..half and half cookies..half chocolate and half vanilla..They look pretty, taste great and are super easy to make..Also, check out different cookies you can make with the same dough.

Ingredients/ Method

1 and 3/4 cup of All purpose flour
(want them healthy use whole wheat flour- Roti atta)
1 tsp baking powder
1/2 cup and 1 tbsp melted or soft butter ( room temp). I am using salted version
1 cup sugar
1 medium size egg
1 tsp vanilla
2 tbsp milk ( any kind)
1/4 cup cocoa

Method:
Combine flour and baking powder. Beat sugar, egg and butter together until creamy. Add vanilla and flour+baking powder. Form a smooth dough and divide the dough into 2 parts.
Next combine milk, butter and cocoa and add this mixture in half portion of dough to form chocolatey dough. Let the dough chill.
Next form two logs ( one with Vanilla and one with chocolate). ) Cut into two halves and combine portion of vanilla with portion of chocolate. You can just press these pieces together or you may use egg wash.
This log can be frozen as well.
When ready to cook, cut into 1″ thick cookies and bake at 350 F for 8-10 mins. Serve with a smile 🙂

How to make Striped Cookies at home? Simple Valentine’s Day Cookies

Try these super easy and delicious striped cookies this holiday season. They not only look pretty, they taste great and are perfect for your cookie platter.

Ingredients/ Method

1 and 3/4 cup of All purpose flour
(want them healthy use whole wheat flour- Roti atta)
1 tsp baking powder
1/2 cup and 1 tbsp melted or soft butter ( room temp). I am using salted version
1 cup sugar
1 medium size egg
1 tsp vanilla

Method:

Combine flour and baking powder. Beat sugar, egg and butter together until creamy. Add vanilla and flour+baking powder. Form a smooth dough and divide the dough into 2 parts.
Next combine milk, butter and cocoa and add this mixture in half portion of dough to form chocolatey dough. Let the dough chill.
now flatten out the dough and form two same size squares. Then press one on top of the other and cut into 4 equal parts. Press one on top of the other and form a rectangle.
This rectangular dough block can be frozen as well.
When ready to cook, cut into 1″ thick cookies and bake at 350 F for 8-10 mins. Serve with a smile 🙂

How to make checkerboard cookies at home? Valentine’s Day Cookies

These pretty little checkerboard cookies are delicious and so easy to make. Perfect to share with friends and family during holidays or otherwise 🙂

Ingredients/ Method

1 and 3/4 cup of All purpose flour

When ready to cook, cut into 1″ thick cookies and bake at 350 F for 8-10 mins. Serve with a smile 🙂

Ingredients/ Method
1 cup salted butter- softened
1/2 cup powdered sugar
1/4 cup cocoa
1 tsp vanilla
2 cups all purpose flour

for Dusting: Some powdered sugar

Method: Combine butter, sugar and cocoa and fluff them up with an electric blender. Add in flour and gently fold to form a smooth dough. Chill the dough. When you are ready to cook the cookies, preheat oven to 375 F. Form golf size balls with the dough and bake for 12-15 mins until the dough is set. Let the cookies cool down completely and then roll them in powdered sugar. Serve with a smile 🙂

Veg Momos is a tasty Indian street food which can be steamed, deep fried or pan-fried. It originates from Nepal and Tibet but nowadays has become very popular in Northern region of India. Ingredients/ Method

1 cup flour ( i used 3/4 cup all purpose flour and 1/4 cup whole wheat)
Roughly 1 cup of water
1 tsp of oil

For stuffing:

3-4 garlic cloves chopped
Small piece of chopped ginger and onion
2-3 tbsp oil
2-3 cups of veggies of your choice . I use mushrooms, carrots, beans, corn and peas
Salt Per taste
1/2 tsp red chilli pwd
1/2 tsp cumin powder
1-2 tsp soy sauce

Method:
Prepare the dough by mixing flour, water and oil. Let Dough stand for 30 mins covered in a wet cloth or lid
Prepare the stuffing in a pan/wok by stir-frying veggies , spices along with onion, ginger and garlic.
When you are ready to make the momos, add stuffing into small portion of flattened out dough. Seal the ends and shape as you like.
Place all the momos in the steamer and cook until done. This bamboo steamer needs 10-12 mins and I place the momos either in a foil or parchment paper.

When done, serve with a sauce of your choice.

Hi guys, in celebration of upcoming 2014 Cinco De Mayo I thought of sharing this easy and super tasty recipe of how to make fish tacos at home with you.

Ingredients/ method

2 Fish Fillets- I used Basa
2 tsp all purpose flour
1/2 tsp Parsley
1/2 tsp Oregano
1/2 tsp to 1 tsp (depending on your preference for heat) Red chilli pwd or Paprika (for milder spice level)
1/2 tsp Black Pepper Pwd
1/2 tsp salt
2 tbsp Oil for cooking fish
For dressing: Lime, Sour cream, Mayo, Jalapeno and Fresh Cilantro
For crunch: Coleslaw (no dressing) with cabbage-carrots
Corn Tortillas

Method: Prepare the spice mixture by combining all the spices and flour and roll the fish pieces in it. Once thoroughly coated, fry until both sides are done (few mins on each side) on medium high flame. Cut in small pieces and place on a warm corn tortilla. Add coleslaw , dressing and few more drops of lime. Enjoy!

 

How to make Aloo Chana Chaat at home? Indian Snacks Recipe

Aloo Chana Chaat

Aloo Chana Chaat is my take on healthy Indian Street food. Aloo Chana Chaat is basically an Indian snack, quite healthy and literally means Potatoes-Chickpea Salad with tons of yummy flavours. You can make it really spicy if it suits your palate or keep it mild as per your taste buds.

Ingredients/ Method

1 Cup Boiled Chickpeas (Chana)
1 Cup Boiled Potatoes
1/2 Cup chopped tomatoes
1 tbsp Green chilli (Handle with care your mouth might get burnt)
2 tbsp Green Onions (Optional but adds a nice bite)
2 tbsp chopped cilantro
1/2 tsp salt
1/4 tsp roasted cumin pwd
1 tbsp lemon juice
1/4 cup Tamarind Sauce/Chutney
(Recipe for Tamarind Chutney here)

Tamarind Chutney can be used in several recipes, enjoyed with variety of snacks, added onto sandwiches, crackers. If you don’t want to prepare your own Tamarind Chutney then you can simply buy it readymade too in bottles in grocery stores.

For Dressing:
2 tbsp fresh cilantro leaves
4 tbsp Plain homemade yogurt
1/2 tbsp Mint Leaves (I used dried)
1/2 tsp black pepper powder
(Blend all dressing ingredients together for smooth paste)

Simple mix all ingredients together, pour the dressing over and serve in mini tartletes or party cups.

One of my cousin’s daughters who had appeared in the 10th Class Annual Private Exam 2013 for Kashmir Division has been praying fervently since last few days since exams results were expected to be out soon. JKBOSE i.e. Jammu and Kashmir State Board of School Education (JKBOSE) has just declared the result of 10th Class Annual Private Exam 2013 for Kashmir Division. Yes, the exam results are out. Of course she passed with the flying colors and her future looks bright. It’s so easy for the Indian students now days to simply log on to the website of the exam board and check their results.

I am almost reminded of the time when I gave my 10th class board exams. Seems like another era. I use to be so tense before any exam results were to be announced. Board exams were especially crucial. 10th standard exams determined whether a student could opt for medical, non-medical, commerce or arts field. After all your career or future (Bright or Bleak) all depended on your exam results. Well, I am not boasting or anything but I was always a good student and usually did well in the exams (we won’t mention Math exam here or how I use to throw up before Math tests always fearing the worst.) I got good marks in grade 10 exams and still remember how my family and relatives were so happy. My dad bought ladoos and jalebis and distributed it among friends and neighbors. My mom prepared my favourite Lamb Rogan Josh, Naan bread and Almond Kheer. Ah, those were the days. I think mom and my aunts just needed an excuse to celebrate and cook delicious meals.

Anyways, if you or someone dear has just appeared in an important exam and is waiting results just encourage them to stay positive and remind them how much you love or care for them no matter what might be the result. I know Indian parents seldom do that rather their is immense pressure on Indian students to perform well. Once the results are out and it’s time to celebrate, prepare these tasty treats at home and indulge like theirs no tomorrow. After all, all the hard work of your kids has been paid off. You can now proudly say, ” Mooh mitha karoji. Pappu Pass ho gaya hai.”

9 Indian snacks for your Holi Party

Indian Snacks

Having friends over to celebrate Holi and wondering what to prepare..Well, worry not..I am here to your rescue. Check out some appetizers from my Indian Kitchen to make your Holi 2014 party a great success.

1. Onion Bhaji (Bhajiyas) 

I remember craving these Pyaz/Pyajj Ke Pakore after playing with water balloons during Holi morning. These onion pakoras (Onion fritters) are quick, easy and quite flavorful and here’s how you can make them:

Ingredients and Method:
3/4 cup Besan (chickpea flour)
1 tbsp Rice Flour
3/4 tsp salt
1/4 tsp turmeric
1/2 tsp red chilli pwd
1 tsp Amchur (Dry Mango Powder)
1/4 tsp Carom Seeds (Ajwain)
1/2 cup water (to make Batter)
Oil to fry the Bhajiyas
1/2 large onion chopped or 1 small onion

Method:
1. Chop up the onion in thin slices and cut in half. Set aside.
2. Mix all the ingredients to form a smooth batter. Add in the onions.
3. Heat Oil in Kadhai and add small portion of onions clad in batter in the oil.
4. Fry until golden brown. Place bhajis (Pakoras) on paper towel to drain the excess oil.
5. Serve with Chutney of your choice.

2. Matri (Namak Pare)

I like to enjoy Namak Pare/Matri with my cup of chai not just during Holi but throughout the year. Ofcourse, these are fried so you can only eat so much. Namak Paare (also called Matri, Matar, Katar, Nimki, Shankarpali Namakpara in different regions of India) can be easily made at home with few ingredients. This is a salty Indian snack and goes well with Tea/Coffee, perfect to serve at parties and for late night snacking.

Ingredients:
All Purpose Flour
Salt
Ajwain Seeds/ Carom Seeds
Oil for deep frying

The process for making namakpare is very simple.
1. You need to make stiff dough by combining flour, salt, carom seeds, 2 tbsp oil and water.
2. Let the dough stand for 10 mins.
3. Roll out the dough.
4. Cut in desired shape and deep fry
5. Serve warm and you can store this Indian snack in an airtight container for days.

3. Bhakarwadi

A few days ago I had store bought Bhakarwadi’s at a friend’s house and it reminded me how much I miss my favourite aunt’s homemade Bhakarwadi’s. She specially made them during the spring season when we all cousins got together to play Holi. Give them a try this Holi.

Ingredients
For The Dough
1 Cup Chickpea flour (Besan)
1 Cup All Purpose flour (Maida)
1 tsp Salt
1/4 tsp Turmeric (Haldi)
1/2 Tsp Ajwain Seeds (Carom Seeds)

To Be Mixed Together For The Stuffing

1 tsp Cumin Seeds (Jeera) , 1 tsp Coriander Seeds (Dhania), 1 tbsp Fennel Seeds (Saunf), 1 tbsp Sesame Seeds (Til), 1 tsp Poppy seeds, 4-5 curry leaves (I used dried ones), 1 tsp Dried Ginger Powder (Sund/Soond), 1/2 tsp Red Chilli pwd, 1/2 tsp Garam Masala, Salt (to taste) and 1 tsp Sugar

1/2 cup Plain Shredded Coconut

Other Ingredients
Oil for deep frying and 1 tbsp Lemon juice

4. Aloo Bonda

Oh the joy of eating fresh Aloo Bonda’s (Spiced Potato Balls) from street stalls. Unhealthy but so yum. Prepare them at home for your Holi party to spice things up.

Ingredients: (Makes 30-40 balls)
4-5 medium size potatoes
2 tsp salt
1 tbsp freshly grated ginger-garlic
3 stalks of cilantro leaves (coriander leaves) chopped
1 small green chilli (optional- can make bonda’s extremely spicy)
2 tsp Mango Powder (Amchur)
1/2 tsp Red chilli pwd
1/2 tsp Turmeric
1/2 tsp black pepper pwd

For Batter
1 cup Chickpea flour (Besan)
1/2 cup Rice Flour
Pinch of garam masala and mango pwd

Oil for deep frying

1. Boil, peel and mash potatoes
2. Add all the spices and mix everything thoroughly and make small golf size balls.
3. Prepare the batter by gradually adding water. Batter shouldn’t be too thick or runny.
4. Dip the potato balls in the batter and deep fry until golden brown (should only be 3-4 mins). You can fry several balls at a time.
5. Serve with your favourite sauce and enjoy!

5. Veg cutlets 

If you are thinking why oh why so many Indian snacks are deep fried then give yourself a little break and enjoy these tasty veg cutlets which are made using variety of vegetables and are pan-fried so that you can indulge guilt free.

6. Spinach Cheese Bites:

Though not so traditional these baked Spinach and Cheese Bites can be a showstopper at your next party. These perfect little bites are great finger food.

For pastry/shell:
1 cup all purpose flour
1/4 tsp Salt
1/4 tsp ajwain
1/4 tsp baking pwd
3 tbsp veg. oil
1/4 cup water

For stuffing:
1 bunch chopped spinach
1 onion
3-4 garlic cloves
Salt and spices of your choice
(we used garam masala, red chilli pwd and mango pwd)
Optional: peas
1/2 cup grated cheese (Mozzarella)
Oil for cooking

1. Add 2 tbsp oil in wok and fry onions and garlic.
2. Add spinach and cook.
3. Add spices and mix well.
4. Let cool down and then add grated cheese.
5. Prepare dough by mixing all pastry ingredients.
6. Let dough stand for 30 mins.
7. Roll out the dough. Flatten it out with rolling pin. Cut in small pieces.
8. Fill with the stuffing.
9. Bake at 400 F for 10-12 mins.
10. Serve with your fav chutney.

7. Tandoori Tofu

With more and more Indian people trying fusion foods, these Tofu bites will charm your guests as well. Simply prepare this flavorful Tofu dish by marinating it in some aromatic Indian spices and then baking it in the oven or grilling them on a skillet. This Tandoori Tofu Recipe is great for potlucks or your next get together.  We have used Green Bell peppers with Tofu but you can also use other vegetables of your choice like Mushrooms, Onions, Tomatoes etc.

I am sure you have tried Paneer Pakora at some point in your life. So, you know I am right when I say you can never go wrong with Paneer Pakodas at any party.

One of the most popular and traditional Indian snacks is Samosas and their is so much you can do witht hem. You can fill them up with variety of different filling. Bake them, fry them, make them veg or non-veg, big or small..all in all you can satisfy bunch of hungry people with some tasty Samosas which can be prepared at home or can even by store- bought.
