Summer is here and so its time to enjoy summer treats like tasty homemade icecreams a.k.a Kulfi. Although Ice creams are easily available in the market during summer months, their is something special about making Kulfi at home. That sense of achievement, shared passion for quality food with friends and family and that smile on you kids face when they see a specially prepared ice cream bowl in front of them is truly something unique.
I really enjoy Badam Kulfi and here is how you can make it at home.

For Almond Ice cream

1 cup Condensed Milk
1/2 tsp Cardamom Powder
1/2 to 1/4 cup Blanched Almonds

Method:

1. Put Almonds in a blender. Add Condensed milk and cardamom powder.
4. Blend everything together and pour it in popsicle moulds, plastic cups or a container.
5. Let freeze overnight or atleast 4-6 hrs. Once frozen, take out from the freezer, remove from the mould and serve the way you desire.

How to make Mango Kulfi | 3 ingredients only Mango Ice cream Recipe

Mango ice cream is a perfect summer treat and this recipe calls for only 3 ingredients. Who doesn’t like easy homemade mango Kulfi.

Ingredients (Serves 2-3)

3/4 cup Coconut Milk
2 tbsp coconut cream
1 cup shredded sweet coconut

Method:

1. Put all the ingredients in a blender.
4. Blend everything together and pour it in popsicle moulds, plastic cups or a container.
5. Let freeze overnight or atleast 4-6 hrs. Once frozen, take out from the freezer, remove from the mould and serve the way you desire.

Ingredients/ Method

1/2 cup Milk powder
1/2 cup all purpose flour
3 tbsp Sooji/Rava/ Semolina ( Cream of wheat)
1 cup Milk
Desi ghee for cooking
Cardamom powder and fennel seeds for flavouring

For Syrup:

1/2 to 3/4 cup sugar and 1/2 cup water
Remember Syrup thickens upon standing.
Cardamom for flavour.

Dry fruits for garnish

Method:

Mix flours and make batter by adding milk. Add cardamom powder and fennel seeds and fry on a pan until both sides are brown. Prepare syrup and dip malpuas in the syrup. Garnish with dry fruit and serve.

Holi Recipes- Indian MilkCake Recipe (Kalakand Recipe)

Learn how to prepare this delicious Indian sweet called Kalakand or Indian Milk cake for your next special occasion. I love to prepare it during Rakhi (Raksha Bandhan) for my brother as well as during Holi and Shivratri for my friends and family.

Ingredients:

1/2 tsp Saffron (to be dissolved in 2 tbsp milk)
2 tbsp chopped dry fruit of your choice like Almonds, Pistachios, Cashews etc
1 Lt. Full cream Milk (homo Milk- 3.25 %)
2 tbsp Vinegar
150 Ml Condensed Milk (about 1/2 cup)
2 tbsp butter or ghee
1 tsp Elaichi/Cardamom Powder
and patience

1. Dissolve Saffron in 2 tbsp milk
2. Grind or make coarse powder out of Cardamom seeds. You can skip this step by using Elaichi Powder. I prefer to make mine fresh as Elaichi powder can loose its aroma quickly.
3. Make Paneer (Indian style Cottage Cheese/Ricotta). For this pour 1 Lt. milk in heavy bottom pot/pan and bring it to boil. As it starts boiling, add 2 tbsp vinegar so that it can start curdling up. Separate paneer from whey. Whey is nutritious. Keep it for making soups, curries, to use as vegetable stock, to knead dough for paratha or roti.
4. Transfer paneer in a pan. Add butter/ghee and cook for 7-8 mins. Then add condensed milk and cardamom powder. Cook further for 15 mins until everything comes together and milk is almost dries up.
5. Transfer onto a plate/pan, let it cool down and put in thr fridge so that it can set. For quick cooling, put it in the freezer section. after about 2-3 hours, cut in desired shapes and serve.

This dessert/Indian milk cake is so tasty. It’s gooey, soft, melt in your taste quality.

Ingredients/Method

1 tbsp flour
1.5 tsp cocoa powder
2 tbsp sugar
1/4 tsp baking soda
Pinch of salt
4 tbsp Cashew-Almond Milk
2 tsp Oil
2 tbsp Agave Syrup ( or another syrup of your choice)
Pinch of Powdered Sugar

Combine all ingredients, except syrup and microwave for a minute. dress up with powdered sugar. Add in syrup and enjoy 🙂

Best Ever Chocolate Cookies – Homemade Treats

Here are some mouth watering, melt in your mouth cookies which are perfect to be enjoyed with a cup of tea or coffee.

Ingredients/Method

1 cup of flour ( I used combination of all purpose and whole wheat)
1/4th cup cocoa powder
1/2 cup sugar ( this amount is perfect to my liking but you can add upto 3/4 cup of sugar)
1/2 tsp baking soda
Pinch of salt
1 egg
1/2 cup coconut oil
1 tsp vanilla extract

Mix coconut oil, sugar, egg and vanilla extract. Beat them up to have a creamy mixture. Set aside. Add Cocoa, pinch of salt and baking soda into flour. mix well.
Combine wet and dry ingredients together to form dough. place small portions on baking sheet lined with parchment paper.
Bake cookies at 350 F for 7-8 mins. Serve with a cup of chai tea.

Meethi Kachori ( Indian Snacks) – Shivratri Special

With Holi and Shivratri being around the corner and onset of spring, everyone wants to celebrate and have good time with friends and family. Here is a must have recipe for your festival menu which can be prepared in advance.

Ingredients/Method

For the shell
2 cups of flour
(I prefer using 1 cup all purpose and 1 cup whole wheat. You can use either of the two. Usually its prepared with all purpose flour)
2-4 tbsp of Desi Ghee ( Clarified Butter)
Water to knead the dough
Pinch of salt

For stuffing
2-3 tbsp ghee/butter or oil
1 cup of Unsweetned shredded coconut
1 cup dry fruit (chopped)
1/2 to 1 cup of sugar
1/3 cup sesame seeds
1/2 tsp nutmeg

Oil is also required for deep frying the Kachoris

Method:
Prepare the dough by mixing ghee, flour, water and pinch of salt. Set the dough aside for 30 mins.
Prepare the stuffing by frying coconut, dry fruits and other ingredients in a wok along with sugar. Let the stuffing cool down.
Roll out small portions of dough and fill them with stuffing. Close the Kachoris and deep fry until both sides are golden.
Enjoy with cup of Tea or coffee

Sweet Potato Cutlets – Fritters

Ingredients/Method

1 large sweet potato
1/2 cup dry fruit of your choice (I used combination of cashew, almonds, walnuts and pistachios)
1/2 tsp salt
1/2 small onion
2 cloves of garlic
1/2 tsp paprika
1 tsp cinnamon
1/2 tsp ground cumin powder

– Dry roast nuts and set them aside.
– In hot oil, fry some onions and garlic with paprika and salt.
– Add sweet potatoes, cumin and cinnamon. Mix in 1/2 the quantity nuts and fry for 4-5 mins.
– Add water and bring to boil and then let simmer until sweet potatoes are tender.
– Garnish with rest of the dry fruit and enjoy on a cold rainy or chilly winter day.
