Kadhai Mushroom Recipe | How to make Kadhai Mushroom Curry

Kadhai Mushroom is a flavourful curry with a blend of various spices. You can enjoy this dish with naan, roti, rice or parantha. Kadhai dishes usually also include bell peppers. Although Kadhai referes to a kind of dish ( sort of Wok) in which the dish is made, you can prepare it in any pan/skillet that you have in your kitchen.

Ingredients/ Method for the Recipe

300 gms Mushrooms
1 cup bell peppers of your choice chopped in bite size pieces
oil for cooking
1 bay leaf
1 cinnamon stick
Salt per taste ( 1 tsp worked for us)
2-3 pureed tomato
1 tbsp ginger garlic paste
1/2 tsp red chilli powder
1/2 tsp turmeric
1 onion chopped
Cilantro for garnish
1 tsp dried Fenugreek Leaves
2 tbsp greek yogurt/ Whipping cream or sour cream

To prepare Kadhai Masala/Spice blend

(masala would be enough to prepare 1-2 curry dishes)

12-15 Black peppercorn
5-6 green cardamom pods
1 tbsp cumin seeds
1.5 tbsp coriander seeds
5-6 cloves
You can also grind bay leaf and cinnamon stick or use them as such in your dish
Dry roast all your whole spices and then grind them to make a powder (masala) and you it in your dishes ( towards the end of the preparation method)

In a wok, add oil. Let oil become hot and Fry bay leaf and cinnamon stick for 30 secs.
Add ginger-garlic paste and onions. Mix well. Give a minute or two and add salt, turmeric and red chilli powder. Mix well. Cook until onions are no longer raw and change color.
Add tomatoes puree. Mix well. Cover and cook until tomatoes reduce in volume and no longer raw. This will take 4-5 mins on med heat.
Add mushrooms. Let them cook for another 2 mins and then bell peppers. We dont want peppers to wilt completely. They should maintain some of their crunch.
Add kadhai masala, Yogurt and fenugreek leaves.
Garnish with cilantro leaves. Mix well and serve.

How to make Bitter Gourd | Karele Ki Sabji Recipe

Here’s a simple way to prepare it:

2 tbsp oil
1 tsp cumin seeds
1 large onion
Salt per taste
1/2 tsp turmeric
3-4 Bitter Gourd

Optional- 1/2 tsp garam masala

Method:

Peel the skin ( you can choose to leave it on as well) and chop Bitter Gourd into bite size pieces. Set aside. In hot oil, add cumin seeds and add onions along with salt and turmeric. Once tender, add bitter gourd and cover with a lid. Let it cook until bitter gourd is soft and golden brown (7-10 mins) Serve with whole wheat roti or parantha

Chickpea Curry Recipe – Easy Dinner Ideas

Chana- Chickpeas are really healthy, full of fiber, protein rich and taste so good in a masala curry. Chana Masala curry is easy to make and is a great dish to sere to your guests when they come over for dinner. Here’s how you can convert simple chickpeas into exotic curry.

Ingredients:

1 cup Chickpeas (Uncooked)
2 onion for onion paste, 1 onion for the masala
2 tomatoes
1 green chilli ( deseeded)
4-5 cloves of garlic and small piece of ginger
2 tsp Salt
1 tsp Turmeric
1 tsp mango powder
1 tbsp crushed coriander seeds
1 cinnamon stick
1 bay leaf
3-4 tbsp tomato paste
5-6 stalks of Cilantro
4-5 tbsp oil
1 black cardamom
1tsp cumin seeds
1/2 tsp red chilli powder

Method:

1. Soak chickpeas in water overnight or atleast an hour.
2. Discard the water and get your cooker ready.
3. Make onion paste with ginger, garlic and onions
4. Heat oil in the cooker
5. Fry cumin, coriander, cinnamon, bay leaf and black cardamom
6. Add green chill and onions. Mix in salt, turmeric and red chilli powder.
7. Mix in tomato puree ( by blending 2 tomatoes with 2 tbsp of water). Cook for 3-4 mins.
8.Add chick peas, amchur/ mango powder, tomato paste. Mix well.
9. Add water
10. Cover the lid and cook for 3-4 whistles ( if chick peas were presoaked), if unsoaked – longer
11. Once the cooker has cooled down, open the lid and garnish with cilantro leaves. Serve with Coconut Rice.

Easy Noodles Recipe – Quick Weeknight Dinner Ideas

Here is a simple and quick recipe for making Chinese stir- fried noodles. Best thing about the recipe is that it can be customized to suit your taste. Whether you want an instant snack or have to whip up a meal for guests, this recipe is great, make it spicy or keep it mild and enjoy 🙂

Ingredients:

Noodles of your choice
1-2 cup veggies ( I used frozen peas, carrots, corn and beans)
2-3 tbsp veg oil
2 tbsp soy sauce
1-2 tbsp vinegar
2 tbsp sesame oil
2 tsp Sesame seeds
1 tsp salt
1 tsp five spice powder
Optional- 1-2 tbsp hot sauce/ ketchup/ garlic chilli sauce or any other sauce you like or have on hand..I kept it mild so that my kids could enjoy it too.

Begin by boiling noodles and set them aside.
In a wok saute your veggies and add seasoning and sauces. Add sesame seeds and sesame oil towards the end and mix in with the noodles. Serve hot.

Punjabi Rajma Masala Recipe – Indian Dinner Ideas

Delicious, full of flavour, vegan, gluten free and protein rich dish from Punjabi cuisine, world famous, Rajma Masala. Here’s how mom use to cook it.

Ingredients/Method

1 cup red kidney beans ( I use uncooked beans and then soak them in water overnight before boiling them)
1 large onion ( or 2 medium)
3-4 cloves of garlic
2-3 inch piece of ginger
1 black cardamom
1 stick of cinnamon
1 bay leaf
2-3 tbsp oil for cooking
1/2 tsp garam masala
3-4 tomatoes (+ 1,2 cups of water)
Salt per taste
1 tsp cumin seeds
1 tsp red chilli powder
1 tsp turmeric

Method:
– Boil beans in pressure cooker.
– Make onion paste with onions, ginger and garlic.
– Fry onion paste in hot oil along with cumin, bay leaf, cinnamon and cardamom. Add salt, turmeric and red chilli powder.
– Cook for 4 to 5 mins.
– Add tomato puree ( chopped tomatoes pureed in blender along with 1-2 cups of water)
– Add beans. Cook further for 15-20 mins.
– Add garam masala. Mix well. Garnish and serve.

Mini homemade veg Crepes – Easy snack ideas

This is an easy recipe which shows how to prepare Instant Idli batter at home using Sooji/Rava ( Semolina/Cream of Wheat) and yogurt. You can then prepare these crepes instead of vegetable idlis to enjoy as a snack, for breakfast or for the road.

Ingredients/ Method
1 cup Sooji/ Cream of wheat
1 cup yogurt
1/2 to 1 cup water
Spices as per your taste. 1 tsp Salt/ 1 tsp red chilli pwd ( or for milder version- Paprika)/ 1 tsp dry mint powder (Pudina powder)
1 -2 cup of veggies of your choice. I add: Peppers, onions, carrots and spinach. Mushroom is a good one to add. My mom adds tomatoes which I am not too found of them in this batter.

Prepare the batter with Yogurt, sooji and water. Add veggies. Add spices and then cook for 5 mins on a skillet with a little bit of oil. Enjoy with tomato chutney.

Quick Lunch Ideas – 5 min Ricotta and Peas Sabji

Ingredients/ Method

1/2 cup Peas
1/2 cup Ricotta
small piece of onion chopped
1/2 cup of tomatoes chopped
3-4 garlic cloves chopped
1-2 tbsp oil
1/2 tsp mustard
1/2 tsp cumin seeds
Salt per taste
1/2 tsp red chilli pwd/Paprika
1/2 tsp turmeric (Haldi)
Optional- 1/4 tsp garam masala or seasoning pepper
Garnish with chopped cilantro leaves

– Heat oil in a pan. Add cumin and mustard seeds. Saute some onions/garlic/ Peas. Add spices. Add tomatoes. give few more mins for all flavours to mingle. Add ricotta. Mix well. Add pepper. Garnish with coriander/cilantro leaves and serve with roti or your fav flatbread.

Easy Vrat Ke Aloo Recipe – Quick lunch Ideas

1 Large potato or 2-3 small/medium size potatoes

2-3 tbsp Yogurt

Method: Heat oil in a pan and add seeds. Add potatoes. Mix well and add spices. Cover and cook for 5-6 mins. When almost done, add yogurt and let cook further for 2 mins. Then turn the heat off and serve potatoes. They taste delicious on their own and make for a great side dish as well.

Easy Tofu and Broccoli Curry Recipe ( Quick Lunch Ideas)

I like eating Tofu and here is a flavourful curry dish with tofu, Broccoli and Bell Peppers. If you enjoy eating tofu then definitely check out our tasty Tofu recipes.

Ingredients/ Method:

650 gms Extra Firm Tofu
1-2 cups of bell peppers chopped
1-2 cups of broccolli
1/2 cup sliced onions
3-4 garlic cloves
1 tsp salt
1/2 tsp turmeric
1/2 tsp paprika
1/2 tsp curry powder
1/2 tsp corn starch
1/2 cup of water

Marinade for Tofu

3 tbsp plain yogurt
1 tbsp soy sauce
1/4 tsp garlic salt, regular salt, paprika and ginger powder
2-3 tbsp oil for frying.

Method:
1. Cut extra firm Tofu in bite size pieces and marinade overnight ( or atleast an hr)
2. Pan fry in hot il until all sides are lovely golden.
3. While tofu is frying, in a wok heat oil and fry onions and garlci for 2-3 mins. Add bell peppers and broccolli. Mix thoroughly and then add spices ( except curry powder).
4. Cover and cook for 4-5 mins. While veggies are cooking mix corn starch in water and set aside.
5. Add curry powder, Tofu , and water ( with corn starch). Bring it to a boil. Simmer for 2 mins and serve with rice, noodles or enjoy on its own.
