Indian Snack Finger Food Superbowl Recipe

Crispy Pakoras are a great finger food. Serve this tasty snack at your next super bowl party or game night. Easy to make these fritters are crowd pleaser. Although their are many different variety of Pakoras or Pakoda ( whatever you may choose to call it) Mixed Pakoras are my favourite as you get a bit of everything. Here’s a simple recipe for you to try in your own kitchen. Pakoras were our special treat on rainy days or whenever we had guests over.

Ingredients/ Method

Oil for deep frying
2-3 cups of chopped veggies- medley of vegetables
Spices- Salt, pepper, Amchur ( mango Powder), ajwain ( carom-caraway seeds), chilli powder, Dried fenugreek leaves. Spice level should be adjust as per the quantity you are cooking.
Optional– 2 tbsp Ketchup ( simply to add a little bit more oomph to your pakoras)
1/2 cup to 3/4 cup chickpea flour- Besan
2-3 tbsp water.

Method:

Mix spices with veggies and let stand for 10-15 mins. Veggies start to ooze out water. Add in besan a.k.a chickpea flour and make a batter. Deep fry small portions in hot oil. Serve with Chutney of your choice. The best thing about this dish is that its gluten free, dairy free, vegan  and you get to eat  your veggies. After all, eating vegetables shouldn’t be a boring task.

Bell Peppers Recipe | Simple Bell Peppers Curry Indian Style

Here is an easy and delicious Bell Peppers recipe for which you don’t need very many ingredients. Best thing is that bell peppers are available all year round where I love so we can enjoy this dish anytime of the year.

Ingredients and Method

1 Onion
2-3 Bell peppers
4 medium size potatoes
2-3 tbsp oil
1/2 tsp cumin seeds
3-4 garlic cloves
1 tsp salt ( adjust as per your taste)
1/2 tsp Turmeric
2 tbsp Tomato Paste
1 tsp dried fenugreek leaves (Kasoori Methi)
Optional: Red chilli pwd

Chop onions, potatoes and peppers.
Heat oil in a pan or wok and add cumin seeds. After 30 secs, add onions, garlic, salt and turmeric.
After 2-3 mins, add potatoes, bell peppers. Mix well. Cover and cook for 7-8 mins.
Add tomato paste. Mix well and cook until almost done. Add dried fenugreek leaves ( Kasoori methi) and give another 5 mins. Ensure potatoes are tender and everything is fully cooked before serving 🙂
Indeed a great side dish.

Easy Homemade Potato Fries – Pan fried

My kids love fries and I often make this simple version of pan-fried potatoes fries for them and they seem to devour it within minutes. I call them golden fries because turmeric lends that nice yellow touch to them.
Everyone loves Fries because they are so comforting. Here I show you how to make easy pan-fried golden fries at home in no time.

Ingredients/ Method

3-4 medium sized Golden Potatoes
1 tsp salt
1/2 tsp Red chilli powder and turmeric
Skillet to cook and 2-3 tbsp oil

– Peel and Cut potatoes in long thin slices. Heat oil in a pan. Toss potatoes with this oil and then add spices. Cover and cook on a medium high heat until done.

Chicken Potato Curry Dinner Recipe

Chicken curry made using potatoes and chicken wings has a unique taste. It makes for a great weekend lunch or dinner. My family loves this easy chicken wings recipe and I hope you’ll enjoy it too.

Ingredients

1 kg chicken wings
3-4 tbsp plain yogurt
1 tbsp soy sauce
2 tbsp bbq sauce
1 tsp curry powder
1 small roughly chopped red onion
1 tbsp ginger- garlic paste/or chopped ginger and garlic
1 tsp cumin seeds
1 tsp crushed coriander seeds ( or powder)
1/2 tsp garam masala
2 tbsp tomato paste
2 cups of water
Spices used: salt, Turmeric and red chilli powder
Fresh Cilantro leaves for garnish
Adjust Salt per taste
1 tsp red chilli powder
1 tsp Turmeric
2-3 tbsp oil
2-3 potatoes

Method:

– Marinate chicken for an hour in yogurt/sauces and spice mixture.
– Heat oil in a pan and fry coriander/cumin for 30 secs.
— Add onions and mix well. Add ginger- garlic.
– Add salt, turmeric and chilli powder. Cook for 2-3 mins.
– Add potatoes. Mix well. Cover and cook for 3-4 mins.
– Add tomato paste and marinated chicken.
– Add curry powder. Mix well. Fry for 5-6 mins.
– Add water and let chicken cook until tender and no longer raw.
– Add garam masala and cilantro. Mix well.
– Serve with Roti/naan or rice.

Potato Corn Curry Recipe | Aloo Corn Curry Dinner

Aloo (Potatoes) and Sweet Corn make a great combo in this simple yet delicious comforting curry

Ingredients/ Method

2 medium size potatoes
1 finely chopped onion
2 tbsp oil
1/2 tsp cumin seeds
1 tbsp ginger garlic paste
Salt per taste
1/2 tsp red chilli powder
1/2 tsp turmeric
1/2 cup water
2 medium size tomatoes
1 cup corn
1 tsp curry powder
Garnish with cilantro leaves and serve with Roti (Indian flatbread)

– Fry spices with onions and ginger garlic. Add corn and potatoes. Mix well. Add tomatoes and cook until tender. Add Curry powder. Water if required and cook until curry dish is ready.

How to make Karahi Chicken | Chicken Curry Recipe Kadhai Chicken

Chicken is my husbands favourite ingredient and he loves curry so its obvious that I make this Kadhai chicken for him often. Kadhai Chicken is a flavourful curry with a blend of various spices. You can enjoy this dish with naan, roti, rice or parantha. Kadhai dishes usually also include bell peppers. Although Kadhai referes to a kind of dish ( sort of Wok) in which the dish is made, you can prepare it in any pan/skillet that you have in your kitchen. Here is a recipe for Kadhai Masala Spice Mix.

Ingredients/ Method for the Recipe

400 gms boneless/skinless chicken
1 cup bell peppers of your choice chopped in bite size pieces
oil for cooking
1 bay leaf
1 cinnamon stick
Salt per taste ( 1 tsp worked for us)
2-3 tomatoes
1 tbsp ginger garlic paste
1/2 tsp red chilli powder
1/2 tsp turmeric
1 onion chopped
Cilantro for garnish
1 tsp dried Fenugreek Leaves
2 tbsp greek yogurt/ Whipping cream or sour cream
optional- Green chillies (chopped)- your choice seeded or deseeded
To prepare Kadhai Masala/Spice blend
(masala would be enough to prepare 1-2 curry dishes)

12-15 Black peppercorn
5-6 green cardamom pods
1 tbsp cumin seeds
1.5 tbsp coriander seeds
5-6 cloves
You can also grind bay leaf and cinnamon stick or use them as such in your dish
Dry roast all your whole spices and then grind them to make a powder (masala) and you it in your dishes ( towards the end of the preparation method)

In a wok, add oil. Let oil become hot and Fry bay leaf and cinnamon stick for 30 secs.
Add ginger-garlic paste and onions. Mix well. Give a minute or two and add salt, turmeric and red chilli powder. Mix well. Cook until onions are no longer raw and change color. About 3-4 mins
Add chillies and tomatoes. Mix well. Cook until tomatoes reduce in volume and no longer raw. This will take 4-5 mins on med heat.
Add chicken. Let it cook for another 2-3 mins and then bell peppers. We dont want peppers to wilt completely. They should maintain some of their crunch. Add some water. Cover and cook until chicken is no longer raw.
Add kadhai masala, Yogurt and fenugreek leaves.
Garnish with cilantro leaves. Mix well and serve.

How to make Kadhai Masala | Indian Spice mix

Kadai Masala is a flavourful Indian spice blend that can make ordinary curry dishes extraordinary. Basically we roast whole spices and then grind them to make this masala powder.

Ingredients/ Method

(masala would be enough to prepare 1-2 curry dishes)

5-6 green cardamom pods
1 tbsp cumin seeds
1.5 tbsp coriander seeds
5-6 cloves

Simple Veg Biryani Recipe | Easy Indian Dinner Recipes

Learn how to prepare simple Veg biryani at home. This tasty and easy rice dish is best enjoyed with plain yogurt, raita, pickles or chutney. Complete meal in itself, this biryani recipe is not only delicious but quick and super easy to make.

Ingredients:

1.5 cup rice
2 tbsp oil
2 tbsp butter
1 bay leaf
1 cinnamon stick
2 green cardamom
1 black cardamom
4 cloves
4 peppercorns
1 small onion
1/4 tsp cumin seeds
1 tsp paprika
1 tsp turmeric
Salt per taste (may we recommend 1.5 tsp)
1 green chilli
1 tsp ginger-garlic paste
Vegetables of your choice (2 cups)
2-3 stalks of cilantro leaves for garnish
1/2 cup well beaten plain yogurt

Method:

1. Soak rice in cold water for atleast 10 mins.
2. In a pot, heat 2 tbsp of oil and fry whole spices (Bay leaf, cardamoms, cinnamon stick, peppercorn and cloves) for atleasta minute.
3. Add double the quantity of water in the pot and bring it to boil. Once it starts boiling, add rice and cook until water evaporates and rice are done. (about 10 mins or so)
4. Set rice aside. While the rice is cooking, in a pan heat 2 tbsp butter and fry 1/4 tsp cumin seeds. After 30 secs, add onions, green chilli, turmeric, paprika, salt and ginger garlic paste. Saute for 2-3 mins.
5. Add vegetables of your choice and further fry for 4-5 mins. Add plain yogurt. Mix well and cook along with vegetables until they are done.
6. Layer rice and vegetables one after the other in a deep dish or casserole. Garnish with cilantro leaves and gently mix.
Serve hot with plain yogurt or raita, pickles or chutney.

Masala Egg Toast Recipe | Easy Indian Breakfast Ideas

Learn how to make Masala Egg toast in your kitchen within 5 minutes. It can be prepared with few simple ingredients present in your kitchen. If you are pressed for time and want to have a quick snack or a quick meal, then give this Masala Egg Toast a try. Way better than grabbing a bag of chips or grabbing junk food from a drive-thru. It is easy, healthy and can be ready in no time.

Ingredients:

2 eggs
2 slices of bread
Any leftover veggies – I used onions, green peppers and red peppers (around 2 -3 tbsp- finely chopped)
1/4 tsp salt
1/4 tsp Garam Masala
1/4 tsp turmeric
Little bit of red chilli flakes
(adjust spices per your taste)
Oil for cooking

Method:

1. Crack eggs in a bowl and whisk them for couple seconds.
2. Add in spices and vegetables.
3. Dip in slice of bread.
4. Heat 1-2 tbsp oil in a pan. Once the oil is hot, put the slice on the pan. Add some veggies on top.
5. Cook until both sides are golden brown.
6. Serve with good ol’ tomato ketchup or chutney of your choice.

How to make Bitter Gourd | Karele Ki Sabji Recipe

Bitter Gourd is not a very popular vegetable since its bitter in taste. However, its good for our system as it’s a blood purifier and also helps control blood sugar levels. Highly recommended food for Diabetic people or when you are recovering from illness.

Here’s a simple way to prepare it:

2 tbsp oil
1 tsp cumin seeds
1 large onion
Salt per taste
1/2 tsp turmeric
3-4 Bitter Gourd

Optional- 1/2 tsp garam masala

Method:

Peel the skin ( you can choose to leave it on as well) and chop Bitter Gourd into bite size pieces. Set aside. In hot oil, add cumin seeds and add onions along with salt and turmeric. Once tender, add bitter gourd and cover with a lid. Let it cook until bitter gourd is soft and golden brown (7-10 mins) Serve with whole wheat roti or parantha
