How to prepare Mixed Greens Masala? Indian vegetarian recipe

Learn how to cook power greens (spinach and other green leafs) in Indian spices while maintaining their nutrition. This is a healthy and easy recipe.

Ingredients ( Serves 2-3)
375 gms mixed greens
1 med. size potato chopped
1 onion
2-3 cloves of garlic
1 inch piece of ginger
1 small tomato
1 tsp salt
1/4 tsp turmeric
1 tsp garam masala
1/2 tsp paprika
2 tbsp canola oil
1 tsp cumin seeds

1. Heat oil and fry cumin seeds.
2. Add onions, ginger and garlic. Saute for 45 secs and add salt, turmeric, paprika
3. Fry for 2-3 mins.
4. Add potatoes. Add 1/4 cup water. Cover and cook for 5-6 mins.
5. When nearly done, add tomato. Mix well and add your power greens.
6. Cook for 2-3 mins. Make sure potatoes are done. Add garam masala.
7. Serve with Roti, Naan or as a side dish with any other meal.
