2 lbs chicken wings
Marinade:
1/2 cup Yogurt
1 tbsp oil
1 tsp salt
1/4 tsp turmeric
1/2 tsp garam masala
1 tsp red chilli pwd
1/4 tsp tandoori masala
1 tsp garlic pwd
Glaze
2 tbsp lemon juice
1 tbsp honey
2 tbsp chopped cilantro
Marinade for 30 mins. Then bake at 400 F for 20 mins, then put the glaze and bake another 10 mins. Sit on a patio, balcony or go to park. Enjoy a glass of wine and these flavorful and juicy wings.
This is a super simple and easy way to prepare grilled lamb chops the Indian way.
Marinade 1/2 kg Lamb in 2 tbsp lemon juice, 3 tbsp olive oil, 1/4 tsp oregano, 1 tsp curry pwd,1/2 tbsp sea salt and 1/2 tbsp black pepper pwd for 45 mins to an hour in the fridge.
Take them out and let them come to room temp. Next, Heat the grill to 400 F and cook lamb for approx 4 mins on each side for medium to well and 2-3 mins for rare. Let rest for couple of mins and serve.
Here I am sharing with you a simple recipe for making kabobs on the tawa, hence the name tawa kabobs.
Ingredients:
1 lb ground meat (we used ground turkey)
3 tbsp chickpea flour (besan)
1 small chopped onion ( about half a cup)
handful cilantro leaves (Coriander leaves, dhania). You can use herb of your choice
Salt per taste
1 well beaten egg
1 tsp red chilli pwd
1 small green chilli (omit green chilli if you dont like heat)
1 tsp garam masala
1 tbsp ginger/garlic paste
1 cup finely chopped red pepper
Mix all these ingredients together and let stand for 30 mins.
Next, heat a pan or tawa. Add 2 tbsp oil and put small meat patties on to it and cook until both sides are brown. Press down on the kabobs firmly while cooking so that its well cooked from inside as well.
Serve with chutney of your choice as an appetizer or over rice (with naan) as main part of the meal.

Here’s what you will need:
3-4 big potatoes
2 tsp salt
1/2 cup green peas
1 tsp paprika
1 tsp garam masala
1 tsp amchur (Dry Mango Powder)
Spring Roll Pastry shells
Method: Cut Potatoes in big chunks and boil for 10-12 mins (or until fully done). Drain the water. Let potatoes cool down, then peel the skin off. Mash the potatoes and add in all the spices and peas. Combine well and now the potatoes are ready to be stuffed.
Take 1 pastry shell ( the one I used was a large square piece which I cut into 4 smaller pieces). Fill in the potatoes, fold the pastry (watch the video to learn how to fold the samosas and then deep fry them until golden brown. Serve with Mint or Tamarind Chutney.
(To save time, I used store bought but you are welcome to prepare your own)

1/4 tsp Ajwain (Carom seeds)
1/2 tsp chaat masala
1 tsp soya sauce
1 tsp ginger-garlic paste
2 tbsp rice flour
4 tbsp besan (chickpea flour)
1/2 cup water
Oil for fryingMethod:
1. Marinade chicken along with spices and onions for 20 mins.
2. Next add chickpea flour and rice flour. Mix well by adding water as required.
3. Fry in hot oil for 3-4 mins until golden brown on all sides and cooked from inside.
4. Take them out and put them on brown paper/ paper towel to soak out excess oil.
5. Sprinkle some chaat masala on top and serve with your favourite chutney.
