Osheaga 2014, International Women’s Day and Quick Vegetable Lentils Curry Recipe

While several of my friends are hoping and planning to go to Osheaga 2014 – you know that big multi day music festival in Montreal, Canada (Infact, it is  one of the biggest music festivals here in Canada) I am a simple girl and am happy with the concert tickets for Katy Perry’s show here in Calgary which I got as a gift from my darling husband for International Women’s Day.

Yes, he acknowledged the fact that it was Women’s day and he needed to get me a gift (No..don’t think I am a lucky girl) this is all because he got a lot of S*** from me for not getting me a Valentine’s day gift but just thinking a nice dinner would suffice. No..all hell didn’t break loose (when I didn’t get a V-day gift) but  he just got a few sarcastic remarks last month so he needed to makeup for that. Also, I had been bugging him saying we need to go see a nice show of one of our favourite artists. We haven’t gone to see one in a long time (almost since our kids birth and they are few years old now.) During several of our conversations in the past he had mentioned how he had been to Osheaga show once, has seen so and so live…so this was long overdue and now I need to get in better shape for the concert. It’s going to be one hot date with my hubby so I need to look good, feel good, be able to fit in one of my favourite pre baby tops that I’ve saved for a special occasion.. that’s why yesterday I made a big batch of Vegetables and Lentils Curry which I’ll be eating often to reach my Health Goals this year. This Vegetables andLentils curry is amazing. It’s healthy, filling, full of nutrition and almost a complete meal in itself.

Really simple yet quick and healthy lunch or dinner idea is to serve this vegetable and lentils curry with rice or flatbread of your choice to your friends and family. This one pot meal is flavourful and you can customize it to your taste by adding vegetables of your choices and adjusting the spices.

Ingredients/ Method

1 Cup Lentils
1 tbsp Oil
1/2 tsp cumin and mustard seeds
2 dried red chillies
10-12 curry leaves
1/2 tsp fenugreek seeds
1 small chopped onion
1 tbsp ginger-garlic paste
1/2 tsp turmeric
1 tsp salt (adjust to taste)
Veggies of your choice (Potatoes, Carrots, Zucchini, Spinach etc)
2 chopped tomatoes
1/2 cup Tamarind juice
5 cups water
1 tbsp Sambhar Masala Pwd (You can also use Garam Masala or Curry Powder Instead)

Method:
1. Wash and drain the lentils.
2. Take a pressure cooker and add tbsp oil and heat it up. Add cumin, mustard, chillies, curry leaves and fenugreek seeds. Fry for a min.
3. Add onions, ginger-garlic paste, salt and turmeric. Fry for 2 mins and mix in the vegetables.
4. Add tamarind juice and tomatoes. Mix well and add Lentils. Another quick stir and add water. Add Sambhar Masala Powder.
5. Put the lid on pressure cooker and cook for 4 whistles. Turn the heat off and let pressure cooker cool down before opening it.

Your vegetable and Lentils curry is now ready. Serve with rice or flat bread your choice. Great as a soup in itself too.
