How to make veg Minestrone Soup – Soup of the day

Combination of veggies, pasta and beans make this soup very fulfilling. Great comfort food for cold chilly winter nights. You can customize it to suit your own taste and play around with spices in your pantry.

Ingredients

1 cup of beans soaked overnight ( You can also use canned beans)
1 cup of pasta of your choice
2-3 tbsp oil for cooking
1 large chopped onion
3-4 cloves of garlic
Salt per taste ( Tip: add little bit just to get the things going and adjust the seasoning towards the end)
1 tsp paprika
Vegetables I used – 1 small piece of celery, 1 zucchini, 1 carrot, 1 potato
1.5 tsp oregano
1/2 tsp parsley
1 tsp basil
3-4 large tomatoes- fresh
3-4 cups of water
1/2 tsp seasoning pepper

Method:

Soak beans in water overnight. They will quick really fast in the pressure cooker this way.
Begin by boiling pasta along with some salt and oil.When pasta is done, discard the water, drain pasta and set it aside.
Next, heat some oil in a pan and saute onions and garlic along with salt and paprika for 2-3 mins. Mix everything well.
Add vegetables. Add spices.
Mix and cook for 3-4 mins.
Add tomatoes. Stir them in.
Add water. Cover the lid and let everything cook for 2-3 whistles. When the cooker cools down, open the lid and add pasta in. Adjust seasoning. Add pepper and serve warm.
