Easy Healthy Ladoo Recipe – 3 ingredients only

Super simple, delicious and healthy recipe for making ladoo in 5 mins at home. Ok..this is not a traditional ladoo but new age, full of taste and easy to make.

Ingredients/ Method

1 cup dates – pitted
1/3 cup chocolate chips
1 cup of dry fruit of choice

Blend all ingredients together until coarse mixture is formed. Take out of the blender. Pour in a plate. Form small round balls and let chill. Decorate with cashews if need be and serve with tea.

Ingredients/Method

1 cup of flour ( I used combination of all purpose and whole wheat)
1/4th cup cocoa powder
1/2 cup sugar ( this amount is perfect to my liking but you can add upto 3/4 cup of sugar)
1/2 tsp baking soda
Pinch of salt
1 egg
1/2 cup coconut oil
1 tsp vanilla extract

Mix coconut oil, sugar, egg and vanilla extract. Beat them up to have a creamy mixture. Set aside. Add Cocoa, pinch of salt and baking soda into flour. mix well.
Combine wet and dry ingredients together to form dough. place small portions on baking sheet lined with parchment paper.
Bake cookies at 350 F for 7-8 mins. Serve with a cup of chai tea.

Ingredients/ Method

4 cups Rice crispies
Roughly 9-10 oz pack of marshmallows
2 tbsp butter
decoration with some smarties
optional- few drops of vanilla essence

Melt butter in a pot and then add marshmallows. Stir them until melted and once they begin to bubble, add rice krispies and vanilla essence. Mix well until well combined and then turn the heat off. while still warm, form into round balls. make sure you work with greased or wet hands as the mixture is quite sticky. decorate with smarties and serve with a smile.

Try these super easy and delicious striped cookies this holiday season. They not only look pretty, they taste great and are perfect for your cookie platter.

Ingredients/ Method

1 and 3/4 cup of All purpose flour
(want them healthy use whole wheat flour- Roti atta)
1 tsp baking powder
1/2 cup and 1 tbsp melted or soft butter ( room temp). I am using salted version
1 cup sugar
1 medium size egg
1 tsp vanilla
2 tbsp milk ( any kind)
1/4 cup cocoa

Method:

Combine flour and baking powder. Beat sugar, egg and butter together until creamy. Add vanilla and flour+baking powder. Form a smooth dough and divide the dough into 2 parts.
Next combine milk, butter and cocoa and add this mixture in half portion of dough to form chocolatey dough. Let the dough chill.
now flatten out the dough and form two same size squares. Then press one on top of the other and cut into 4 equal parts. Press one on top of the other and form a rectangle.
This rectangular dough block can be frozen as well.
When ready to cook, cut into 1″ thick cookies and bake at 350 F for 8-10 mins. Serve with a smile 🙂

Want to make delicious and easy Indian dessert within 30 mins? Well, here is an easy version of Gajar Ka halwa ( Carrot Halwa recipe) popularly known as Gajrela in India, it is quite tasty and is a really popular Indian dessert. We have flavoured it here with Cardamom powder and coconut flakes and then topped it with dry fruit of our choice. Traditionally when Halwa was made, carrot were cooked in milk for hours and hours, we have made the whole process easy by using condensed milk (which is already sweetned)
Try this recipe and I promise that you will not be disappointed.

Ingredients/ Method

3 cups of carrots (grated)
1 can of condensed milk ( 300 ml)
1/2 tsp cardamom powder
2 tbsp coconut oil ( or Clarified butter- desi ghee)
1/2 cup unsweetened dry coconut flakes
12-15 pieces of dry fruit (chopped) – I use raisins, cashews and almonds

Heat oil (ghee) in a pan. Once melted or hot, add carrots and cook them for 15-20 mins until soft and tender on medium low heat. Keep stirring them so that nothing sticks to the bottom of the pan. add coconut flakes and further cook for 3-4 mins. Add condensed milk and mix well. Let carrots soak in the milk and rest of the milk will evaporate ( about 3-4 mins) add cardamom powder and sprinkle your fav. dry fruit on top. Serve it cold or warm. Enjoy 🙂

How to make Bread Pudding- Indian style ( Easy dessert ideas)

Indian style Bread Pudding Recipe

One of the easiest desserts ever is bread pudding. Here’s how you can make it with an indian touch.

Ingredients/ method
( Serves 2-3)

4 slices of bread
1 tsp oil to grease your loaf pan
2 tbsp melted butter
1/2 cup dry fruit of your choice. I like using raisins and pecans
( Almonds, Cashews, Walnuts work really well in this pudding too)
2 large eggs- beaten
1 can Evaporated milk – 370 Ml ( almost 1.5 cup + a bit more)
1/2 cup sugar
I use sugar moderately but you can add upto 3/4 cup- depending on how sweet you want your pudding
1 tsp Cinnamon
1/4 tsp nutmeg
1/2 tsp Elaichi Powder (Cardamom Powder) – Made by simply crushing or coarsley grounding green cardamom seeds
3-4 drops of Kewra essence (1/4 tsp). If you don’t have it use good ol’ Vanilla extract.

Preheat oven to 350 F.
Grease a standard 5×9″ loaf pan with oil and place bread slices in it. I divide each slice into 4 equal parts but you can make them smaller as well.
Add Dry fruit onto bread slices.
Next in a bowl mix together other ingredients – eggs, spices, milk and sugar. Once well beaten and nicely incorporated with each other, pour this mixture
over bread.
Bake at 350 F for 40-45 mins until nicely set.
You can prepare a special bread pudding sauce like caramel or vanilla sauce, serve it with ice cream or drizzle maple syrup/ may be even honey and serve.
