Easy Veggie Burger Recipe

My husband makes wicked Portobello mushroom sandwiches and here is how he does it 🙂 We usually enjoy it on the weekends as a brunch with some sort of soup.

Ingredients/Method

2-3 portobello mushrooms ( 1 mushroom per sandwich).
Toppings of your choice – We use thin slice of tomato, Sauteed onions/peppers/spinach. You can use a leave of lettuce of too.
Whole wheat bun or sandwich bread
1-2 tbsp oil
Salt and pepper. 1-2 tbsp soy sauce.
Cheese (optional)
Any sandwich spread/ or add butter/ghee on the toasted buns.
We love to add hash brown in the sandwich too 🙂

Cook the mushrooms ( on a grill, pan fry or in a bbq) after removing the tail ends and brushing them with salt/pepper/oil/soy sauce and then last 2 mins of cooking- add slice of cheese on top. Add on toasted or untoasted buns along with other toppings. you can spread sandwich spread on one side of 1 bun. Enjoy with your fav soup for a classic lunch 🙂

Easy Indian Starter Recipe – Stuffed Besan Chilla

Besan Cheela or chilla is a savoury Indian Pancake made with Chickpea (garbanzo beans flour), here we are making cones out of this crepe and stuffing it with delicious mushroom filling. Enjoy it with sauce/chutney of your choice. These stuffed crepes are gluten free, vegan and quick to make. You can pack these in Kids lunch boxes or even quickly whip it for friends or family when they come over for a cup of tea. It is a great little snack to enjoy without any guilt as its quite healthy.

Ingredients/ Method

For Stuffing: Onions, mushrooms, Spinach, cilantro and spices (Salt, Red chilli powder, Turmeric)

For Pancake

1 cup Besan /Gram Flour
1/2 tsp ajwain (carom or caraway seeds)
1/2 tsp Black Pepper powder
Salt to taste
1 tsp pudina powder ( Dired ground mint leaves)
1 tsp Mango Powder
Oil for cooking

Prepare the stuffing and set aside.
Make Batter by adding water to gram flour and add in spices.
Cook on hot skillet with a little bit oil until brown on both sides.
Once pancakes are ready, make cones out of them and fill with the stuffing and serve with chutney of choice.

I love Noodles and here i share with you a very easy and tasty Noodles recipe- I call it Masala Noodle bowl which i think is better than even Maggi.

Ingredients:

300 gms of Noodles of your choice. I used Chowmein ( a local brand)
2-3 cup fresh veggies ( I used cilantro, onions, cucumber, tomatoes and peppers)
2-3 tbsp veg oil
2 tbsp lemon juice
1 tsp salt
1 tsp black pepper
1 tsp curry powder

Begin by boiling noodles and set them aside.
In a wok add oil and saute noodles and mix in spices and veggies. Squeeze in lemon and Serve hot or cold.

Ingredients/Method

1 Cup Baby Spinach Leaves
1 cup chopped watermelon
1/ cup blue berries
1/3 cup chopped cashews and walnuts
1-2 tbsp lemon juice
1-2 tbsp olive oil

Combine all the ingredients. Let the salad chill and enjoy 🙂

Curried Quinoa Recipe | Gluten Free Vegan Lunch Ideas

Quick, easy and delicious Stir- fried Quinoa for lunch with vegetables. This recipe is perfect for any day lunch meal.

Ingredients/ Method for the Recipe

1 cup cooked Quinoa
Vegetables of your choice – we used onions, carrots, celery, mushrooms and peppers
oil for cooking
1/2 tsp cumin seeds
Salt per taste
1 tsp curry powder
1 tbsp lemon juice
1 small chopped tomato
1 tbsp ginger garlic paste
1/2 tsp red chilli powder
1/2 tsp paprika

Method:

Cook quinoa (just like rice and set aside)
In a wok, add oil. Let oil become hot and Fry cumin seeds for 30 secs.
Add ginger-garlic paste, onions and carrots. Mix well. Give a minute or two and add salt and paprika/red chilli powder. Mix well. Add other veggies. Add tomatoes. Mix well.
Add curry powder. Add Quinoa and then for some crunch Red peppers.
Add lemon juice. Mix well and serve.

Quinoa Khichdi Recipe with Beans

Healthy, Fibre Rich and easy to make this Quinoa Khichdi recipe is a must try for everyone.

Ingredients/Method

1/2 cup Quinoa (+ 1 cup water)
1/2 cup blend of Red kidney beans and black chickpeas ( Soak them in water waternight or atleast an hour) + 1 cup of water
1/2 cup Oats
Salt and Paprika as per taste

For Tempering/ Tadka

2 tbsp oil
1/4 to 1/2 cup onions and 3-4 cloves of garlic
1/2 tsp cumin seeds

Method:
Soak Beans and chickpeas in water overnight. Then add all ingredients in a pressure cooker and cook on medium heat for 3 whistles ( or until beans are tender). Open cooker once it has cooled down. Fry onions, garlic and cumin and pour tadka/tempering over quinoa and enjoy with plain yogurt, raita or curry of your choice.

Quick Lunch Ideas – 5 min Ricotta and Peas Sabji

Do you like Ricotta? How about trying this delicious, flavourful Ricotta- Peas dish which goes well with any kind of flatbread or simply enjoy it on its own 🙂 This recipe is for 1- 2 people.

Ingredients/ Method

1/2 cup Peas
1/2 cup Ricotta
small piece of onion chopped
1/2 cup of tomatoes chopped
3-4 garlic cloves chopped
1-2 tbsp oil
1/2 tsp mustard
1/2 tsp cumin seeds
Salt per taste
1/2 tsp red chilli pwd/Paprika
1/2 tsp turmeric (Haldi)
Optional- 1/4 tsp garam masala or seasoning pepper
Garnish with chopped cilantro leaves

– Heat oil in a pan. Add cumin and mustard seeds. Saute some onions/garlic/ Peas. Add spices. Add tomatoes. give few more mins for all flavours to mingle. Add ricotta. Mix well. Add pepper. Garnish with coriander/cilantro leaves and serve with roti or your fav flatbread.

Bulgur (Burgol) Pilaf Recipe ( Easy Lunch Ideas)

Bulgur is a quick-cooking form of whole wheat that has been cleaned, parboiled, dried, ground into particles and sifted into distinct sizes. Bulgur is a nutritious, versatile wheat product with a pleasant, nut-like flavor and an extended shelf-life that allows it to be stored for long periods. Bulgur is high in fiber and rich in B vitamins, iron, phosphorus and manganese.

Often confused with cracked wheat, bulgur differs in that it has been pre-cooked. In contrast to cracked wheat, bulgur is ready to eat with minimal cooking or, after soaking in water or broth, can be mixed with other ingredients without further cooking. Bulgur can be used in recipes calling for converted rice (and it’s more nutritious than rice).

The many spellings of bulgur can be confusing too: bulgar, bulghur, burghul, just to name a few. Here we prepare a delicious Pilaf with this tasty grain.

1 cup cooked Bulgur wheat
2-3 tbsp oil
1 tsp cumin seeds
1 tsp mustard seeds
1/2 cup chopped onion
1 cup of veggies of your choice
(Peas, corn , mushrooms
1 tsp salt
1/2 tsp red chilli powder
2-3 tbsp lemon juice
1/2 cup chopped cilantro leaves.

Method:
Cook Bulgur Wheat, just like rice. It cooks way quicker than rice. Set aside.
Heat some oil in a pan. In hot oil, add cumin and mustard seeds. Fry some onions. Add salt and Chilli powder.
Fry veggies. Stir them well.
Add bulgur. Mix thoroughly. Add lemon juice and cilantro leaves and enjoy.

1 cup onions
2-3 cloves of garlic
1 cup Mushrooms
1 cup of Red pepper
2 cups stewing tomatoes
350 gms of Tofu
1 tsp cumin powder
1 tsp salt
1 tsp red chilli powder
1/2 tsp seasoning pepper
2-3 tbsp oil

Method
Heat oil in the pan. Add onions and garlic. Add salt and red chilli powder. Mix well and fry for 2 mins.
Add mushrooms and red peppers. Add Tofu. Mix it well. Add Cumin and tomatoes. Let everything cook for 4-5 mins. Finish off with seasoning pepper.
Pour on a bun. Top up with pickled onions and avocados and enjoy.

Easy Baked Salmon Recipe – Quick Dinner Ideas

Ingredients/ Method

2 salmon Filets- Cut in 4 long pieces
2 tbsp Mustard
2 Tbsp lemon juice
Salt/ Pepper per taste
15-20 Pistachios
2 tbsp Bread crumbs
1 tbsp oil

Combine Mustard and Lemon juice. Prepare crust by combining Pistachios/ Breadcrumbs/ Salt/pepper and Oil in a blending jar..blend together. When all components are thoroughly combined, transfer this mixture in a plate.
Apply mustard and lemon juice mixture on Salmon and then pistachio mixture. Now bake at 375 F for 15-20 mins or until done.
