Bell Pepper and Paneer Curry Recipe | Easy Indian Vegetarian Recipes

Bell Pepper and Paneer go really well together especially in this simple and tasty Curry recipe. I added mushrooms in this dish for an extra bite and the results are quite good. This quick curry dish will make your weekend dinner easier.

Ingredients/Method

400 gms Paneer
2-3 tbsp Oil for cooking
1 tsp cumin seeds
1 tsp fennel seeds
1 small chopped onion
1 tbsp minced garlic
1/2 to 1 tsp curry powder
1 can of tomato sauce
1 can of water ( adjust as per need)
salt per taste
1/2 tsp red chilli powder
1 tsp turmeric
2 cups chopped bell peppers
1 dried red chilli
1 cup mushrooms
1 tsp dried fenugreek leaves ( kasoori methi)
4-5 stalks of cilantro chopped ( for garnish)

Method:

1. Heat oil in a wok and add cumin, fennel seeds and dried red chilli.
2. Add Onions and minced garlic. Saute onions.
3. Add bell peppers and mushrooms. Mix well and saute.
4. Add salt, turmeric and red chilli powder.
5. Add Paneer. Mix well. Add tomato sauce. Add water.
6. Add curry powder. Cover and cook for few more mins.
7. Finish off by adding garam masala, dried fenugreek leaves and cilantro leaves. Serve over rice.

 

Easy Tofu and Broccoli Curry Recipe ( Quick Lunch Ideas)

I like eating Tofu and here is a flavourful curry dish with tofu, Broccoli and Bell Peppers. If you enjoy eating tofu then definitely check out our tasty Tofu recipes.

Ingredients/ Method:

650 gms Extra Firm Tofu
1-2 cups of bell peppers chopped
1-2 cups of broccolli
1/2 cup sliced onions
3-4 garlic cloves
1 tsp salt
1/2 tsp turmeric
1/2 tsp paprika
1/2 tsp curry powder
1/2 tsp corn starch
1/2 cup of water

Marinade for Tofu

3 tbsp plain yogurt
1 tbsp soy sauce
1/4 tsp garlic salt, regular salt, paprika and ginger powder
2-3 tbsp oil for frying.

Method:
1. Cut extra firm Tofu in bite size pieces and marinade overnight ( or atleast an hr)
2. Pan fry in hot il until all sides are lovely golden.
3. While tofu is frying, in a wok heat oil and fry onions and garlci for 2-3 mins. Add bell peppers and broccolli. Mix thoroughly and then add spices ( except curry powder).
4. Cover and cook for 4-5 mins. While veggies are cooking mix corn starch in water and set aside.
5. Add curry powder, Tofu , and water ( with corn starch). Bring it to a boil. Simmer for 2 mins and serve with rice, noodles or enjoy on its own.

Vegan Homemade Green Curry Recipe (Dinner Ideas)

I love Curries and don’t mind making them at home. Here is a version of Green Curry recipe which is flavourful and delicious..fun to make at home.

Ingredients/ Method

For Green Curry Paste

1 cup thinly sliced onion ( Scallion would be even better)
4-5 garlic cloves
2 inch piece of ginger chopped
1 lemon grass
4-5 Thai basil leaves
10-12 cilantro stalks
1-2 tbsp Kafir Lime Zest1-2 green chillies ( you can keep the seeds or deseed them to not have super Hot paste)

Optional- salt and Turmeric ( if you are going to hang on to the paste for 7-10 days). These two elements act as preservatives.

For Masala: 1 tsp Cumin, Coriander and Black Pepper. We will dry roast and grind them and use 1 tsp of masala for your recipe

2.5-3 cups of Coconut Milk
I usually add a stalk of lemon grass in the pan while cooking the curry which i remove before serving
Vegetables of your choice – I use cauliflower, broccoli and bell peppers
1 tbsp of Soy sauce ( I omitted Fish sauce/ Shrimp paste to keep the curry vegan)
Salt per taste
Garnish: Thai Basil or Cilantro leaves chopped

Method: Prepare Green curry Paste. If you havent already checked my Green Curry Paste video please do so.
In a wok, heat some coconut milk. When it comes to boil, Add Green Curry Paste. Mix it well. Add salt and reduce it until it is no longer raw. Add Veggies. Thoroughly coat them with the paste. Add Coconut milk and let them cook for 7-8 mins. Add soy sauce. Mix. Add 1 more cup coconut milk. Bring to simmer and then finish off with tsp of masala and Garnish with cilantro leaves.
Serve with Coconut Rice.

How to make Saag Tofu Curry ( Healthy Indian Vegetarian recipe)

Saag Tofu Curry

Saag Tofu Curry is a healthy and easy Indian vegetarian dish which is best enjoyed with Roti or Paratha. Saag is basically green leafy curry and in this case we are preparing it with spinach leaves.

Ingredients/ Method
1 Bunch Spinach
350 gms Tofu
For marinade and frying Tofu
2 tbsp Yogurt
1/2 tsp Salt and Turmeric
1/2 to 1 tsp Red chillli pwd
1-2 tbsp Oil

For making Masala/Curry
2 tbsp Oil
1/2 tsp Cumin
1 cup chopped Onions
1/2 tsp Salt
1/4 tsp Turmeric/ Red chilli pwd
2-3 cloves of garlic
small piece of ginger
1.5 cup chopped tomatoes
(2 small or 1 large tomato)
1/4 tsp Garam Masala

– Cut firm tofu in small cubes and marinade with yogurt and spices for atleast 15 mins and then pan- fry until golden brown.
– In another pan, heat oil and add cumin seeds. give them about 30 secs and add onions, spices and ginger-garlic. Fry until golden and then add tomatoes. Fry further for 2-3 mins. Add spinach and lightly saute. Then transfer the mixture to a blender and make a smooth puree.
– Add over cooked Tofu pieces and sprinkle Garam masala on top. Serve hot with Roti/chapati or with rice.
