Easy Veggie Burger Recipe

My husband makes wicked Portobello mushroom sandwiches and here is how he does it 🙂 We usually enjoy it on the weekends as a brunch with some sort of soup.

Ingredients/Method

2-3 portobello mushrooms ( 1 mushroom per sandwich).
Toppings of your choice – We use thin slice of tomato, Sauteed onions/peppers/spinach. You can use a leave of lettuce of too.
Whole wheat bun or sandwich bread
1-2 tbsp oil
Salt and pepper. 1-2 tbsp soy sauce.
Cheese (optional)
Any sandwich spread/ or add butter/ghee on the toasted buns.
We love to add hash brown in the sandwich too 🙂

Cook the mushrooms ( on a grill, pan fry or in a bbq) after removing the tail ends and brushing them with salt/pepper/oil/soy sauce and then last 2 mins of cooking- add slice of cheese on top. Add on toasted or untoasted buns along with other toppings. you can spread sandwich spread on one side of 1 bun. Enjoy with your fav soup for a classic lunch 🙂

Easy Watermelon Salad Recipe | Easy Summer Salads

Learn how to make Super healthy, tasty, quick and easy salad – this summer salad is perfect to take to your Canada day or 4th of July Celebrations. Let’s enjoy summer with this clean and delicious salad.

Ingredients/Method

1 Cup Baby Spinach Leaves
1 cup chopped watermelon
1/ cup blue berries
1/3 cup chopped cashews and walnuts
1-2 tbsp lemon juice
1-2 tbsp olive oil

Combine all the ingredients. Let the salad chill and enjoy 🙂

Easy Fruit Quinoa Salad| Quick Lunch Ideas

Need Light lunch? Try this yummy Fruit Quinoa salad.

Ingredients/ Method

1 cup quinoa
1 small chopped apple
1 cup of strawberry and pineapple
1/2 cup dry fruit of choice ( we used pecan and walnuts)
1 tbsp oil
1 tbsp blueberry syrup/ or maple syrup
Salt and pepper
1/2 tsp cinnamon

-Fry apples with a little bit of oil. Add in dry fruit. Mix in quinoa. Add other fruit. Add cinnamon, salt, pepper and drizzle blue berry syrup on top. Enjoy.

Kid Friendly Gluten Free, Vegan Pancakes – Mixed Lentils Dosa

This is a super simple protein rich pancakes recipe which are not only healthy but taste good too. I make these plain for the kids and load them up/ make them a bit spicy for myself ( Check my spicy lentil pancakes recipe.) You can enjoy them with any chutney of your choice but my kids like them with Dahi 🙂

Ingredients/Method

1-2 cups of Mixed Dal/Lentils
Water for soaking the lentils and grinding them to make a coarse paste
Salt/Asafoetida/roasted cumin powder/paprika to add into the batter
desi ghee/oil/butter for cooking batter on a skillet.

Soak lentils overnight or at least 6-8 hrs. Grind to make a coarse paste. Then spice it up and cook on a hot skillet until both sides turn golden brown. Serve with Coconut Chutney (Recipe) or mint chutney ( Recipe).

Healthy Lunch Ideas- Simple Veggie Wrap Recipe

During fall, humans move away from cold summer salads and crave some hearty warm food. While soups are amazing, sometimes you want a good ol’ veggie wrap and thats where this recipe comes in. It’s quick, easy and fulfilling. Best part is you can customize it as per your own taste. Many people often at things like tomatoes, potatoes, lettuce, but some people get creative and add cheese, sour cream spinach, but how healthy is it all? Many people often ask are spinach wraps healthy? In fact, almost any type of veggie wrap is healthy, all you have to watch out for are the extras you add into it, so limit the amount of sauce and any extras.

Ingredients/ Method

I used spinach, onions, zucchini which I sauteed in a pan with some salt, pepper and Balsamic vinegar.
Optional but You can also use portobello mushrooms in the wrap but to get their flavour out, marinate them with some Salt/Pepper and some oil+balsamic Vinegar for at least 30 mins. Then pan-fry them until they shrink in size then cut them in bite size pieces and place on your wrap.
For the wrap, I used carrot/Pumpkin wraps which I picked from Costco. Spread cream cheese on them before adding veggies on. Instead of veggies you can also use Avocado, hummus or other sorts of spreads.
Load the wrap up, fold and enjoy.

Ingredients/ Method

2 sweet Potatoes – Boil and mash them.
1/2 cup chopped onions
1/2 tsp Cumin seeds
1/2 tsp fenugreek seeds (Methre) – These lend that unique flavour to the dish.
1 tbsp grated ginger
1 small chopped tomato
1/2 tsp seasoning pepper. Optional 1/2 tsp garam masala (or curry powder)
2-3 tbsp oil
Spices- Salt, Turmeric and Red chilli powder/ Paprika

– Get sweet potatoes ready (boil, peel and mash them)
– Heat oil in a pan and add cumin and fenugreek seeds. Let them sizzle and add onions and ginger. Add salt, turmeric and red chilli powder
– Fry for 2-3 mins and add sweet potatoes. Mix well. Add tomatoes. Cook for 2-3 mins. Season with pepper/ garam masala and serve warm.

Easy Lunch Ideas – Vegan Sloppy Joes

Vegan food can be quite healthy and delicious. Here is my take on sloppy joes. It’s easy to prepare, quick and flavourful.

Ingredients/ Method

1 cup onions
2-3 cloves of garlic
1 cup Mushrooms
1 cup of Red pepper
2 cups stewing tomatoes
350 gms of Tofu
1 tsp cumin powder
1 tsp salt
1 tsp red chilli powder
1/2 tsp seasoning pepper
2-3 tbsp oil

Method
Heat oil in the pan. Add onions and garlic. Add salt and red chilli powder. Mix well and fry for 2 mins.
Add mushrooms and red peppers. Add Tofu. Mix it well. Add Cumin and tomatoes. Let everything cook for 4-5 mins. Finish off with seasoning pepper.
Pour on a bun. Top up with pickled onions and avocados and enjoy.

Easy Lentils Stew Recipe – Healthy Lunch Ideas

Here is an easy lentils recipe with veggies and flavoured with Zaatar. This one pot dish can be made in bulk and enjoyed anytime during the day. If you are a huge fan of Lentils like I am then also do try: Dal Makhani Recipe, Lentils and Beans Curry or South Indian style Lentils

Ingredients/Method

1 cup light brown Lentils
1/2 cup dark brown lentils
1/2 cup chopped onion
3-4 garlic cloves
2-3 chopped carrots
2-3 chopped potatoes
Salt per taste
1 tsp paprika/cayenne or red chilli powder
2 tbsp zaatar
2-3 tbsp oil
1 tsp cumin seeds
6-8 cups of water (dependent on quantity you are cooking)
1 tsp pepper for seasoning

– Soak the lentils in water overnight or at least 30 mins.
– Heat oil in the cooker. Fry cumin, onions and garlic.
– Add salt, paprika and zaatar.
– Mix well. Add veggies and lentils.
(discard the water lentils were soaking in)
– Add water. Adjust seasoning and serve with flatbread of your choice.

Spicy Black Beans Veggie Wrap

I love Black Beans and I love spice. So, it’s obvious that this month (of January) I will share with you an easy recipe for spicy and healthy Black Beans Veggie wrap which is easy to put together and makes for a great lunch or dinner. It’s a great snack on the go as well.

Ingredients:

1/2 cup boiled black beans
1/2 cup fried onions and corn
1/2 cup Lettuce
1/2 cup Red Pepper
1/2 cup tomatoes
1 tsp Jalapeno Peppers
3-4 stalks of cilantro leaves
1/2 tsp garlic salt
1/4 tsp black pepper
1/2 tsp Red chilli flakes (optional)
1 tsp Lemon juice or 1 tbsp ranch
3-4 Tortilla wraps

Method: Mix all the vegetables and beans. Season them well and add in the dressing. Fill them up in Tortilla Wraps or Homemade Roti and enjoy!
