Easy Veggie Burger Recipe

My husband makes wicked Portobello mushroom sandwiches and here is how he does it 🙂 We usually enjoy it on the weekends as a brunch with some sort of soup.

Ingredients/Method

2-3 portobello mushrooms ( 1 mushroom per sandwich).
Toppings of your choice – We use thin slice of tomato, Sauteed onions/peppers/spinach. You can use a leave of lettuce of too.
Whole wheat bun or sandwich bread
1-2 tbsp oil
Salt and pepper. 1-2 tbsp soy sauce.
Cheese (optional)
Any sandwich spread/ or add butter/ghee on the toasted buns.
We love to add hash brown in the sandwich too 🙂

Cook the mushrooms ( on a grill, pan fry or in a bbq) after removing the tail ends and brushing them with salt/pepper/oil/soy sauce and then last 2 mins of cooking- add slice of cheese on top. Add on toasted or untoasted buns along with other toppings. you can spread sandwich spread on one side of 1 bun. Enjoy with your fav soup for a classic lunch 🙂

Mini homemade veg Crepes – Easy snack ideas

This is an easy recipe which shows how to prepare Instant Idli batter at home using Sooji/Rava ( Semolina/Cream of Wheat) and yogurt. You can then prepare these crepes instead of vegetable idlis to enjoy as a snack, for breakfast or for the road.

Ingredients/ Method
1 cup Sooji/ Cream of wheat
1 cup yogurt
1/2 to 1 cup water
Spices as per your taste. 1 tsp Salt/ 1 tsp red chilli pwd ( or for milder version- Paprika)/ 1 tsp dry mint powder (Pudina powder)
1 -2 cup of veggies of your choice. I add: Peppers, onions, carrots and spinach. Mushroom is a good one to add. My mom adds tomatoes which I am not too found of them in this batter.

Prepare the batter with Yogurt, sooji and water. Add veggies. Add spices and then cook for 5 mins on a skillet with a little bit of oil. Enjoy with tomato chutney.

Ingredients/ Method

2 sweet Potatoes – Boil and mash them.
1/2 cup chopped onions
1/2 tsp Cumin seeds
1/2 tsp fenugreek seeds (Methre) – These lend that unique flavour to the dish.
1 tbsp grated ginger
1 small chopped tomato
1/2 tsp seasoning pepper. Optional 1/2 tsp garam masala (or curry powder)
2-3 tbsp oil
Spices- Salt, Turmeric and Red chilli powder/ Paprika

– Get sweet potatoes ready (boil, peel and mash them)
– Heat oil in a pan and add cumin and fenugreek seeds. Let them sizzle and add onions and ginger. Add salt, turmeric and red chilli powder
– Fry for 2-3 mins and add sweet potatoes. Mix well. Add tomatoes. Cook for 2-3 mins. Season with pepper/ garam masala and serve warm.

Vegan Homemade Green Curry Recipe (Dinner Ideas)

I love Curries and don’t mind making them at home. Here is a version of Green Curry recipe which is flavourful and delicious..fun to make at home.

Ingredients/ Method

For Green Curry Paste

1 cup thinly sliced onion ( Scallion would be even better)
4-5 garlic cloves
2 inch piece of ginger chopped
1 lemon grass
4-5 Thai basil leaves
10-12 cilantro stalks
1-2 tbsp Kafir Lime Zest1-2 green chillies ( you can keep the seeds or deseed them to not have super Hot paste)

Optional- salt and Turmeric ( if you are going to hang on to the paste for 7-10 days). These two elements act as preservatives.

For Masala: 1 tsp Cumin, Coriander and Black Pepper. We will dry roast and grind them and use 1 tsp of masala for your recipe

2.5-3 cups of Coconut Milk
I usually add a stalk of lemon grass in the pan while cooking the curry which i remove before serving
Vegetables of your choice – I use cauliflower, broccoli and bell peppers
1 tbsp of Soy sauce ( I omitted Fish sauce/ Shrimp paste to keep the curry vegan)
Salt per taste
Garnish: Thai Basil or Cilantro leaves chopped

Method: Prepare Green curry Paste. If you havent already checked my Green Curry Paste video please do so.
In a wok, heat some coconut milk. When it comes to boil, Add Green Curry Paste. Mix it well. Add salt and reduce it until it is no longer raw. Add Veggies. Thoroughly coat them with the paste. Add Coconut milk and let them cook for 7-8 mins. Add soy sauce. Mix. Add 1 more cup coconut milk. Bring to simmer and then finish off with tsp of masala and Garnish with cilantro leaves.
Serve with Coconut Rice.
