Healthy Paneer Butter Masala Recipe

Paneer Butter Masala is often considered decadent, rich, creamy dish. There are different Ways to add Superfood Blends to your weekly diet this time we’ve created a healthier version without use of any butter or cream but no compromise on the taste.

Ingredients/ Method

4 tbsp Coconut Oil
1 tsp cumin seeds
1 tsp coriander seeds
400 gms Paneer (Indian Cottage Cheese)
1 chopped onion
3-4 tomatoes
2 tsp minced garlic
2-4 tbsp greek yogurt
1 tsp curry powder
1 tsp garam masala
1 bay leaf
salt to taste
1 tsp red chilli powder
3-4 green cardamom pods
6-7 cashews
1 tsp dried fenugreek leaves
Garnish: Cilantro leaves

Method:
1. Saute paneer pieces in coconut oil and set aside once golden brown.
2. In same pan with a little bit more oil, add bay leaf.
3. Add in chopped onions and cashews. Next, add cumin, coriander, cardamom seeds, salt and chilli powder.
4. Mix well. Add minced garlic. Cook onions are golden brown and no longer raw.
5. Add in tomatoes. Once tomatoes are tender, blend all ingredients with a little bit of water. Remove the bay leaf though.
6. Pour curry in the pan. Add yogurt. Mix gently and add curry powder. Add paneer pieces. Let it all simmer for few mins.
7. Add garam masala. Finish off by adding kasoori methi ( dried fenugreek leaves) and cilantro leaves.
Serve with rice or roti.

Amritsari Parantha Recipe

We Punjabis surely love Parathas and here is one amazing recipe for delicious Punjabi Paneer Paranthas which you can enjoy with pickle or Raita.

Ingredients/ Method

Dough to make Parathas. It’s just combination of whole wheat flour and water and here’s how you prepare it: Dough Recipe

Oil/ghee or Butter to cook Paranthas
Stuffing/Filling:

Grated Ginger- 1- 2 tbsp
Small piece of onion – finely chopped
1-2 green chillies ( Deseed them if you want the parathas less spicy)
5-6 Stalks of Cilantro (Finely chopped)
Grated Paneer (or crumbled) – 200 gms
Spices-
1/2 tsp Salt
1/2 tsp cumin powder
1/4 tsp Ajwain (carom seeds)
1/2 tsp paprika
and any other spices you like

Method: Prepare the stuffing by mixing all the ingredients. Stuff it in small portion of dough and flatten it out with rolling pin ( using a little bit of dry flour), Once the dough is flattened out and thin..cook on a hot skillet with tons of butter/ghee or oil until both sides have brown marks.. Enjoy with pickle, yogurt, chutney or with cup of hot Chai.

Paneer Tikka at home

Ingredients:

• Paneer 300 gms
• Capsicum(Can use all the 3 colors) cubed 3/4 cup
• Onion cubed 1 no.
• Tomato (optional) 1 no.(deseed, cube)
• Sour cream or yogurt 2 – 3 tblsp
• Garlic Paste 1 tsp
• Ginger Paste 1 tsp
• Tomato Paste 1 tsp
• Red chilli powder 1/2 tsp
• Turmeric powder 1/8 tsp
• Garam Masala 1 tsp
• Crushed black pepper(optional) 1/2 – 1 tsp
• Tandoori masala powder(optional) 1/2 – 1 tsp
• Lemon juice from 1/2 of a lemon
• Salt and oil As needed
• Skewers as needed

Method:

• Cut the paneer into bite size pieces. Don’t cut the cubes too big as the marination won’t get infused inside the paneer.
• Cut the capsicums, tomatoes and onions in the similar size too.
• Soak the skewers in water for 15-20 minutes,
• Mix the ginger paste, garlic paste, lemon juice, yogurt, all the powders, salt, tomato paste to make a nice smooth paste.
• Add all purpose floor to the prepared paste
• Add the veggies and paneer to the paste and let them marinate for an hour.
• When you are ready to make, grease the skewers and a grill/pan. Put the skewers into oven for about 30 minutes at 375 °F (Turn them half way through).
• Serve them hot with green chutney and sprinkle some chaat masala and lemon juice over the paneer tikka and enjoy!
