Mini homemade veg Crepes – Easy snack ideas

This is an easy recipe which shows how to prepare Instant Idli batter at home using Sooji/Rava ( Semolina/Cream of Wheat) and yogurt. You can then prepare these crepes instead of vegetable idlis to enjoy as a snack, for breakfast or for the road.

Ingredients/ Method
1 cup Sooji/ Cream of wheat
1 cup yogurt
1/2 to 1 cup water
Spices as per your taste. 1 tsp Salt/ 1 tsp red chilli pwd ( or for milder version- Paprika)/ 1 tsp dry mint powder (Pudina powder)
1 -2 cup of veggies of your choice. I add: Peppers, onions, carrots and spinach. Mushroom is a good one to add. My mom adds tomatoes which I am not too found of them in this batter.

Prepare the batter with Yogurt, sooji and water. Add veggies. Add spices and then cook for 5 mins on a skillet with a little bit of oil. Enjoy with tomato chutney.

Spicy Rice Vermicelli Recipe – Vegan and Gluten Free Recipe

Ingredients/Method

1 nest of Rice vermicelli
2-4 tbsp oil
1 tsp mustard seeds
1 small green chilli ( you can deseed it, if you dont want too spicy)
2 tbsp grated ginger
1 small piece of onion chopped
Salt per taste
1 tsp Turmeric ( Haldi)
veggies of your choice ( what works best is 1 cup bell peppers – red/green, 1/2 cup spinach and 1/2 cup peas
Cilantro leaves for garnish
2 tbsp lemon juice
2 tbsp crushed peanuts ( roasted or unroasted)

Method:
– Boil Rice vermicelli. Make sure that you put them in hot water. As soon as they are tender, run them under cold water. do not overcook or they will become mushy.
– Add 1-2 tbsp oil on them so that they dont stick together.
– Next in a pan, heat oil. When the oil is hot, add mustard seeds. Give them 30 secs and add green chilli, ginger and onion. Mix well.
– Add veggies and salt+Turmeric. Mix and cook until almost done.
– Add noodles. Mix well. Add lemon juice.
– Garnish with cilantro leaves and roasted peanuts and enjoy warm.

How to make Veg Mulligatawny Soup? Soup of the day

Healthy, creamy, flavourful soup Mulligatawny with hint of curry spices is not only easy to prepare but will also keep you full for hours.
Here is my version of the recipe.

Ingredients/ Method

1/4 cup Rice
1/2 cup Lentils of your choice – I am using split green peas
1 large onion chopped
small piece of chopped ginger
3-4 cloves of garlic
Vegetables of your choice like carrots, turnip and celery
1 tsp curry powder
2-3 tbsp oil
1/2 tsp mustard seeds
Salt per taste
1/2 tsp turmeric
1/2 tsp red chilli powder
1 cup coconut milk
3-4 cups of vegetable broth

– Soak rice and lentils in water for at least 30 mins.
– Heat oil in a pot/pressure cooker. Add mustard seeds.
– Add onions, ginger , garlic and salt, turmeric and chilli powder. Fry for 2-3 mins.
– Add veggies and fry for 2-3 more mins. Add rice+ lentils.
– Add curry powder.
– Add 3-4 cups of veg broth and cup of coconut milk.
– Mix well and close the lid.
– Cook for 3-4 whistles and then turn the heat off.
– When cooker cools down, open the lid and garnish the soup as desired and serve warm.

** Soup does thickens up on standing so feel free to add water when you eat it at a later time or add more brother/coconut milk to make it thinner.

How to make Rasam at home? South Indian Spicy Soup Recipe

Learn how to make Rasam (South Indian spicy, flavourful, tamarind soup) with this recipe video. This soup can be served as an appetizer or as a main with some sort of rice dish. Every family has their own rasam recipe and here’s mine 🙂

Ingredients/ Method

-Small piece of tamarind to make tamarind juice- 1/2 cup of water to soak pulp in
– 2-3 tbsp oil
– 1/2 tsp mustard seeds
– 1/2 tsp cumin seeds
– 1/4 tsp asafoetida (hing)
– 1 dried red chilli
– 10-12 dried curry leaves
– 2-3 cloves of garlic chopped
– 1/2 tsp turmeric
– 1/2 tsp salt
– 1/2 tsp pepper
– 2 small tomatoes
– 3-4 cups of water
– cilantro leaves for garnish

– Begin by soaking small portion of tamarind pulp in water. After about 10-15 mins, remove the pulp and pass the juice through a sieve. Set the juice aside.
– Heat Oil in a pan and fry mustard+cumin seeds. Add asafoetida, curry leaves, dried red chilli (crushed or whole as per your preference), garlic cloves. Fry for 3-4 mins.
– Add tomatoes. Add turmeric. Let tomatoes become tender.
– Add tamarind juice. Mix well. Add water and bring to boil. then let simmer for 4-5 mins.
– Add salt, pepper and garnish with cilantro leaves before serving. Serve warm.

Easy Instant snack Recipe- Mushroom Upma

Easy Indian Snacks

Here is an easy recipe for Mushroom Upma which is a popular South Indian breakfast dish. Upma is traditionally made out of Semolina (sooji) and here I have used Cream of Wheat (breakfast cereal) for this dish. It’s quick and tasty. Give it a try if you are craving something savory in the morning or looking for healthy snack ideas. 

Ingredients/ Method
2 tbsp cream of wheat ( finer version of sooji/semolina)
1-2 tbsp oil ( or clarified butter)
1/4 tsp mustard seeds
1/4 tsp cumin seeds
4-5 cashews
1 tbsp chana dal (split yellow lentil)
2 tbsp chopped onions
4-5 chopped mushrooms
3-4 dried crushed curry leaves ( fresh work wonderful but dried ones are a good substitute)
1/2 tsp salt ( or as per taste)
1 cup of water

Method: 
Begin by dry roasting sooji/cream of wheat. Once it starts turning brown, take it off the heat. 
In the same pan, add 1-2 tbsp oil and fry mustard and cumin seeds. Remember oil needs to be hot. Give seeds 30 secs and then add cashews and chana dal, followed by onions and mushrooms. Give them 2-3 misn and then add salt and 1 cup of water. Add cream of wheat and cook until water dries up or semolina puffs up and is tender enough to eat. Serve warm with a cup of chai tea.
