Ingredients:
• 2 bunches of Spinach
• 200 gms Paneer (You can substitute this with Tofu)
• 1 finely chopped Onion
• 1 finely chopped Tomato
• 4 cloves garlic crushed for Tadka
• 2 finely chopped Green Chillies
• 1 teaspoon Salt (or as per taste)
• 1/2 teaspoon Turmeric powder
• 1 tablespoon Coriander powder
• 4 tablespoons oil to shallow fry paneer
• 1 tablespoon Kasuri Methi (dry fenugreek leaves)
• 1 tablespoon Coriander powder
• 1 tablespoon oil for Tadka
Method
• Chop spinach into small pieces and wash it in a strainer.
• Put the chopped spinach in a pressure cooker/covered vessel along with chopped onions, chopped tomatos, kasuri methi, green chillies, salt, turmeric and corriander powder.
• Cook it on a high flame till steam is let out twice (2 whistles).
• Reduce the flame to low and let it simmer for 10 minutes.
• Remove the pressure cooker and open the lid.
• Blend this mixture with a blender till it is a smooth paste.
• Cut paneer into small cubes Shallow fry paneer in 4 tablespoons on oil.(This is an optional step)
• Add the paneer cubes to the palak gravy.
• Take 1 tablespoons of oil in a small saucepan and add crushed garlic to it..
• Heat this on a low flame till the garlic turns brown in colour.
• Pour this mixture over the palak. (This is called as tadka).
• Your palak paneer is ready to be served.
