So, you have decided to bake some cookies this Valentine’s day. I say it’s a wonderful idea and here are few of my favourite recipes to get you started. These cookies are simple to prepare, super tasty and you can impress your Valentine with these or simply pamper yourself and enjoy them because you deserve it.

1. Ultimate Chocolate Cookie (4 ingredient recipe)

Could Valentine’s Day Baking get simple than this? He loves Cookies and you love chocolates 🙂 (Well, who doesn’t ?) These cookies will make both of you happy.

Ingredients:
1/2 cup melted butter
1/2 cup sugar
3/4 cup flour
3 tbsp cocoa

– Mix all the ingredients together and chill the dough for 15 mins in fridge. Roll it in the log for chilling. Makes it so much easier to cut the cookies and then simply bake them at 300 F for 30 mins. Voila..delicious cookies are ready. Serve them in the morning with a glass of milk to your valentine to sweeten their day or with coffee late at night as a dessert.

 

2. Cream Cheese Cookies

These cookies are perfect for bake share, holiday gift giving or sharing with friends during festivities. You can prepare the dough in advance and bake the cookies fresh. This Dough can freeze well as well can last in the fridge for upto 3 weeks.
You can decorate these cookies as you like, cut them in festive shapes or make jam thumbprint cookies out of them.

Ingredients:
1/2 cup unsalted melted butter
1/3 cup cream cheese (Room temp)
1 Large Egg ( Room Temp)
1.5 cup sugar
1.5 cup all purpose flour
1/2 tsp baking powder
1/2 tsp vanilla

Method:
Mix together butter and cream cheese and beat until fluffy. Add in baking powder, sugar, eggs and vanilla and mix well. Once they are combined, add all purpose flour. Chill the dough for 30 mins. Roll out into small golf size balls and press down with measuring cup to have round cookies.
Preheat oven to 375 F and bake for 8-10 mins. Let stand for 2 mins on wire rack before serving.

3. Bite Size Cookies

Perfect for the little hands, why not make these for the newest love of your life. Not only great for sharing, these are kids favourite, nice treat for lunch boxes or after busy day at the park. This cookie dough can be refrigerated for upto 3 weeks easily or freeze it for upto 3 months.

Ingredients:
1.5 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup unsalted butter, Melted
1/2 cup packed brown sugar
1/3 cup granulated sugar
1 large egg
1 teaspoon vanilla
1/2 cup chocolate chips

Method:
1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone mat and set aside.
2. In medium bowl, whisk the flour, salt, and baking soda together. Set aside.
3. In another bowl, mix 2 sugars and butter and mix together. Add in the egg and vanilla and beat together. Stir- in chocolate chips
4. Slowly mix in the flour, until combined. Your Cookie Dough is ready.
5. Roll dough into tiny balls and place on baking sheet and slightly flatten with the palm of your hand or back of the measuring cup. Bake for 8-10 minutes or until cookies are golden brown and set. Remove from the oven and let cool before serving.

4. Jam Thumbprint cookies

Great for sharing- although I won’t blame you if you end up eating all of these yourself. I use a simple cream cheese cookie dough to make these cookies but you can use other cookie dough recipes as well.

Ingredients:
1/2 Cup melted unsalted butter
1/3 cup cream cheese
1/2 tsp baking powder
1.5 cup Sugar
1/2 tsp vanilla
1.5 cup all purpose flour
1 large egg
2-3 tbsp your favourite Jam

Method: Mix butter and cream cheese. Add baking Powder, egg, sugar and vanilla. Whisk together and then add flour. Combine to make the dough. Once the dough is ready, chill it for 30 mins. Roll out some dough balls. Press them with back of measuring cup to have round cookies. Make identation in the middle with your thumb. Add a bit of jam in the centre and bake at 375 F for 8-10 mins.
Cool and then pack in the boxes to give out as gifts or enjoy them with a cup of Chai Tea.

5. Almond Cashew Cookies

I always make these for Bake sale and they are always a big hit.

6. Best Ever Chocolate chip cookies 

I know their are plenty of chocolate chip cookies out there and sometimes it can seem like a daunting task to choose the right recipe. Trust me, I’ve tried a dozen and several of them were good. However, these are best ever chocolate chip cookies. Now my palate might differ from yours but I will let you decide that for yourself after you give these cookies a shot.

These cookies require: Flour, sugar, butter, oats, chocolate chips, baking pwd, baking soda, egg and vanilla essence

  1. I love the idea of a baking day, and given that we siuvrved without an oven for nearly a year (gasp!) I think it should be instated starting now. We had a gas stove that worked fine, but the stove components were electrical so the temp, time etc couldn’t be programmed but now we have a new gas stove and my boys love baking too thanks for the inspiration!~Erin
