Indian Snack Finger Food Superbowl Recipe

Crispy Pakoras are a great finger food. Serve this tasty snack at your next super bowl party or game night. Easy to make these fritters are crowd pleaser. Although their are many different variety of Pakoras or Pakoda ( whatever you may choose to call it) Mixed Pakoras are my favourite as you get a bit of everything. Here’s a simple recipe for you to try in your own kitchen. Pakoras were our special treat on rainy days or whenever we had guests over.

Ingredients/ Method

Oil for deep frying
2-3 cups of chopped veggies- medley of vegetables
Spices- Salt, pepper, Amchur ( mango Powder), ajwain ( carom-caraway seeds), chilli powder, Dried fenugreek leaves. Spice level should be adjust as per the quantity you are cooking.
Optional– 2 tbsp Ketchup ( simply to add a little bit more oomph to your pakoras)
1/2 cup to 3/4 cup chickpea flour- Besan
2-3 tbsp water.

Method:

Mix spices with veggies and let stand for 10-15 mins. Veggies start to ooze out water. Add in besan a.k.a chickpea flour and make a batter. Deep fry small portions in hot oil. Serve with Chutney of your choice. The best thing about this dish is that its gluten free, dairy free, vegan  and you get to eat  your veggies. After all, eating vegetables shouldn’t be a boring task.

Mini homemade veg Crepes – Easy snack ideas

This is an easy recipe which shows how to prepare Instant Idli batter at home using Sooji/Rava ( Semolina/Cream of Wheat) and yogurt. You can then prepare these crepes instead of vegetable idlis to enjoy as a snack, for breakfast or for the road.

Ingredients/ Method
1 cup Sooji/ Cream of wheat
1 cup yogurt
1/2 to 1 cup water
Spices as per your taste. 1 tsp Salt/ 1 tsp red chilli pwd ( or for milder version- Paprika)/ 1 tsp dry mint powder (Pudina powder)
1 -2 cup of veggies of your choice. I add: Peppers, onions, carrots and spinach. Mushroom is a good one to add. My mom adds tomatoes which I am not too found of them in this batter.

Prepare the batter with Yogurt, sooji and water. Add veggies. Add spices and then cook for 5 mins on a skillet with a little bit of oil. Enjoy with tomato chutney.

Potato Pinwheels - Party appetizers

Call them Potato Pinwheels- Party Spirals or Fried Vegetarian rollups, the point is that these bite size party appetizers are a perfect finger food, great for sharing with friends and family or to take to your next get together. Serve them with chutney of your choice and wow your guests.

Ingredients:

To Prepare Dough

1/2 cup rice flour
1/2 cup all purpose flour
3/4 cup chickpea flour (besan)
1 tbsp oil
1/4 tsp salt
1/4 tsp Ajwain (Carom seeds)
1/2 to 3/4 cup water to prepare dough

For stuffing
3-4 boiled and mashed potatoes
1 tsp salt
1/4 tsp black pepper powder
1/2 tsp coriander powder
1/2 tsp cumin pwd
1 tsp Amchur (Mango Powder)
1 tsp Anardana (Dried Pomogranate seeds powder)
Red chilli pwd to taste
3/4 stalk of cilantro/coriander leaves
Oil for deep frying

Method:
1. Prepare the dough by combining water, flours, salt, tbsp oil and carom seeds. Let it sit for 10 mins.
2. Prepare the stuffing by mixing boiled and mashed potatoes with all the spices.
3. Divide the dough into 4 equal parts. Form tennis ball size dough balls and roll them out gently with the help of a rolling pin. Dust your working surface lightly with some flour.
4. Once you’ve flattened out the dough, fill it up with potato mixture. Spread the potato mixture evenly and gently press it into the dough.
5. Roll the dough from one end to form a log. Seal the end with help of some water and then cut the log into pinwheels.
6. Heat oil in a wok and fry pinwheels until golden brown on medium heat. It should take only 2-3 mins.
Serve them hot with chutney of your choice.

1. Homemade Nachos Platter

Quick, easy, delicious snack, this Nachos Platter is fully loaded and perfect for sharing, great for lat night snacking or for entertaining company. You can easily customize this recipe to suit your tastebuds.
Here’s what you’ll need: A large bag of multi grain chips and toppings of your choice: shredded cheese (2 cups)- I used mozzarella and marble cheddar, bell peppers, onions, tomatoes, jalapenos, olives and some seasoning (garlic powder, black pepper and paprika). I also added boiled chickpeas (garbanzo beans and kala chana).
Spread chips on a baking dish and top it up with cheese and topping of your choice. Bake at 420 F for 5-6 mins or until cheese melts and turns a bit golden.

You can easily make this Tandoori chicken pizza at home( using store bought pizza base) using basic indian spices and toppings of your choice. This spicy pizza will be loved by every pizza fan.

These flavorful chicken wings will leave your friends asking for more.  Here’s how to make them:
Ingredients:

2 lbs chicken wings

Marinade:
1/2 cup Yogurt
1 tbsp oil
1 tsp salt
1/4 tsp turmeric
1/2 tsp garam masala
1 tsp red chilli pwd
1/4 tsp tandoori masala
1 tsp garlic pwd

Glaze
2 tbsp lemon juice
1 tbsp honey
2 tbsp chopped cilantro

Marinade for 30 mins. Then bake at 400 F for 20 mins, then put the glaze and bake another 10 mins. Sit on a patio, balcony or go to park. Enjoy a glass of wine and these flavorful and juicy wings.

This is a super simple and easy way to prepare grilled lamb chops the Indian way.

Marinade 1/2 kg Lamb in 2 tbsp lemon juice, 3 tbsp olive oil, 1/4 tsp oregano, 1 tsp curry pwd,1/2 tbsp sea salt and 1/2 tbsp black pepper pwd for 45 mins to an hour in the fridge.
Take them out and let them come to room temp. Next, Heat the grill to 400 F and cook lamb for approx 4 mins on each side for medium to well and 2-3 mins for rare. Let rest for couple of mins and serve.

Here I am sharing with you a simple recipe for making kabobs on the tawa, hence the name tawa kabobs.

Ingredients:
1 lb ground meat (we used ground turkey)
3 tbsp chickpea flour (besan)
1 small chopped onion ( about half a cup)
handful cilantro leaves (Coriander leaves, dhania). You can use herb of your choice
Salt per taste
1 well beaten egg
1 tsp red chilli pwd
1 small green chilli (omit green chilli if you dont like heat)
1 tsp garam masala
1 tbsp ginger/garlic paste
1 cup finely chopped red pepper

Mix all these ingredients together and let stand for 30 mins.
Next, heat a pan or tawa. Add 2 tbsp oil and put small meat patties on to it and cook until both sides are brown. Press down on the kabobs firmly while cooking so that its well cooked from inside as well.
Serve with chutney of your choice as an appetizer or over rice (with naan) as main part of the meal.

Method: Mix all the ingredients. Make small golf size balls out of the mixture. Pre heat oven to 375 F and bake these meatballs for 15-20 mins or until chicken is done. Serve with a glass of wine or chilled beer. Can also be added in any kind of sauce for a hearty meal.

Here’s what you will need:
3-4 big potatoes
2 tsp salt
1/2 cup green peas
1 tsp paprika
1 tsp garam masala
1 tsp amchur (Dry Mango Powder)
Spring Roll Pastry shells

Method: Cut Potatoes in big chunks and boil for 10-12 mins (or until fully done). Drain the water. Let potatoes cool down, then peel the skin off. Mash the potatoes and add in all the spices and peas. Combine well and now the potatoes are ready to be stuffed.
Take 1 pastry shell ( the one I used was a large square piece which I cut into 4 smaller pieces). Fill in the potatoes, fold the pastry (watch the video to learn how to fold the samosas and then deep fry them until golden brown. Serve with Mint or Tamarind Chutney.

For your choice of dessert, give these Maple Pecan Pies a try. Not only your girlfriend will be impressed, your friends will say wow too.
Ingredients:
12 mini Pie Shells/ Tart shells
(To save time, I used store bought but you are welcome to prepare your own)
1/2 cup chopped pecans
2 eggs
1 cup brown sugar (If your tart shells are sweet, you can decrease the quantity of sugar)
3 tbsp Maple Syrup
1/2 cup melted butter
2 tsp Vanilla
1/2 tsp Cinnamon
Method: Preheat oven to 400 F and line the muffin pan with pie shells (along with the tin). Pour chopped pecans evenly among the pie shells. Prepare the filling by whisking together all the other ingredients and cook for 15-18 mins. The edges will turn golden brown and filling will turn dark brown. Take out from the oven and let it cool before serving.

Yes, these are absolutely wicked so you have to make them. Here’s how:
Ingredients:
1/2 kg boneless chicken pieces
1/2 cup onions (Optional but add a great bite to your pakoras)
1 tsp salt (or as per taste)
1/2 tsp red chilli pwd
1/2 tsp turmeric
1/2 tsp garam masala
1/4 tsp Ajwain (Carom seeds)
1/2 tsp chaat masala
1 tsp soya sauce
1 tsp ginger-garlic paste
2 tbsp rice flour
4 tbsp besan (chickpea flour)
1/2 cup water
Oil for fryingMethod:
1. Marinade chicken along with spices and onions for 20 mins.
2. Next add chickpea flour and rice flour. Mix well by adding water as required.
3. Fry in hot oil for 3-4 mins until golden brown on all sides and cooked from inside.
4. Take them out and put them on brown paper/ paper towel to soak out excess oil.
5. Sprinkle some chaat masala on top and serve with your favourite chutney.
