Did you know Renee Fleming American soprano  will sing the national anthem at Super Bowl XLVIII. Well, Our family will be cheering for Seahwaks this year. Who are you going for?
Now, no superbowl party is complete without some good party food and here are few options for you to include on your menu to make your football party a superhit. These 14 Ultimate Superbowl Party Recipes will make your superbowl 48 one to remember:

1. Homemade Nachos Platter

Quick, easy, delicious snack, this Nachos Platter is fully loaded and perfect for sharing, great for lat night snacking or for entertaining company. You can easily customize this recipe to suit your tastebuds.
Here’s what you’ll need: A large bag of multi grain chips and toppings of your choice: shredded cheese (2 cups)- I used mozzarella and marble cheddar, bell peppers, onions, tomatoes, jalapenos, olives and some seasoning (garlic powder, black pepper and paprika). I also added boiled chickpeas (garbanzo beans and kala chana).
Spread chips on a baking dish and top it up with cheese and topping of your choice. Bake at 420 F for 5-6 mins or until cheese melts and turns a bit golden.
Serve with Gucamole or Sour Cream.

You can easily make this Tandoori chicken pizza at home( using store bought pizza base) using basic indian spices and toppings of your choice. This spicy pizza will be loved by every pizza fan.

These flavorful chicken wings will leave your friends asking for more.  Here’s how to make them:
Ingredients:

2 lbs chicken wings

Marinade:
1/2 cup Yogurt
1 tbsp oil
1 tsp salt
1/4 tsp turmeric
1/2 tsp garam masala
1 tsp red chilli pwd
1/4 tsp tandoori masala
1 tsp garlic pwd

Glaze
2 tbsp lemon juice
1 tbsp honey
2 tbsp chopped cilantro

Marinade for 30 mins. Then bake at 400 F for 20 mins, then put the glaze and bake another 10 mins. Sit on a patio, balcony or go to park. Enjoy a glass of wine and these flavorful and juicy wings.

This is a super simple and easy way to prepare grilled lamb chops the Indian way.

Marinade 1/2 kg Lamb in 2 tbsp lemon juice, 3 tbsp olive oil, 1/4 tsp oregano, 1 tsp curry pwd,1/2 tbsp sea salt and 1/2 tbsp black pepper pwd for 45 mins to an hour in the fridge.
Take them out and let them come to room temp. Next, Heat the grill to 400 F and cook lamb for approx 4 mins on each side for medium to well and 2-3 mins for rare. Let rest for couple of mins and serve.

Here I am sharing with you a simple recipe for making kabobs on the tawa, hence the name tawa kabobs.

Ingredients:
1 lb ground meat (we used ground turkey)
3 tbsp chickpea flour (besan)
1 small chopped onion ( about half a cup)
handful cilantro leaves (Coriander leaves, dhania). You can use herb of your choice
Salt per taste
1 well beaten egg
1 tsp red chilli pwd
1 small green chilli (omit green chilli if you dont like heat)
1 tsp garam masala
1 tbsp ginger/garlic paste
1 cup finely chopped red pepper

Mix all these ingredients together and let stand for 30 mins.
Next, heat a pan or tawa. Add 2 tbsp oil and put small meat patties on to it and cook until both sides are brown. Press down on the kabobs firmly while cooking so that its well cooked from inside as well.
Serve with chutney of your choice as an appetizer or over rice (with naan) as main part of the meal.

Method: Mix all the ingredients. Make small golf size balls out of the mixture. Pre heat oven to 375 F and bake these meatballs for 15-20 mins or until chicken is done. Serve with a glass of wine or chilled beer. Can also be added in any kind of sauce for a hearty meal.

Want an elegant party appetizer or finger food for your next get together? Well, try this recipe for Mini samosas (Indian snack) made using spring roll pastry.

Here’s what you will need:
3-4 big potatoes
2 tsp salt
1/2 cup green peas
1 tsp paprika
1 tsp garam masala
1 tsp amchur (Dry Mango Powder)
Spring Roll Pastry shells

Method: Cut Potatoes in big chunks and boil for 10-12 mins (or until fully done). Drain the water. Let potatoes cool down, then peel the skin off. Mash the potatoes and add in all the spices and peas. Combine well and now the potatoes are ready to be stuffed.
Take 1 pastry shell ( the one I used was a large square piece which I cut into 4 smaller pieces). Fill in the potatoes, fold the pastry (watch the video to learn how to fold the samosas and then deep fry them until golden brown. Serve with Mint or Tamarind Chutney.

For your choice of dessert, give these Maple Pecan Pies a try. Not only your girlfriend will be impressed, your friends will say wow too.
Ingredients:
12 mini Pie Shells/ Tart shells
(To save time, I used store bought but you are welcome to prepare your own)
1/2 cup chopped pecans
2 eggs
1 cup brown sugar (If your tart shells are sweet, you can decrease the quantity of sugar)
3 tbsp Maple Syrup
1/2 cup melted butter
2 tsp Vanilla
1/2 tsp Cinnamon
Method: Preheat oven to 400 F and line the muffin pan with pie shells (along with the tin). Pour chopped pecans evenly among the pie shells. Prepare the filling by whisking together all the other ingredients and cook for 15-18 mins. The edges will turn golden brown and filling will turn dark brown. Take out from the oven and let it cool before serving.

Yes, these are absolutely wicked so you have to make them. Here’s how:
Ingredients:
1/2 kg boneless chicken pieces
1/2 cup onions (Optional but add a great bite to your pakoras)
1 tsp salt (or as per taste)
1/2 tsp red chilli pwd
1/2 tsp turmeric
1/2 tsp garam masala
1/4 tsp Ajwain (Carom seeds)
1/2 tsp chaat masala
1 tsp soya sauce
1 tsp ginger-garlic paste
2 tbsp rice flour
4 tbsp besan (chickpea flour)
1/2 cup water
Oil for fryingMethod:
1. Marinade chicken along with spices and onions for 20 mins.
2. Next add chickpea flour and rice flour. Mix well by adding water as required.
3. Fry in hot oil for 3-4 mins until golden brown on all sides and cooked from inside.
4. Take them out and put them on brown paper/ paper towel to soak out excess oil.
5. Sprinkle some chaat masala on top and serve with your favourite chutney.

Spicy Mushroom Paneer Masala Recipe

Mushroom Paneer Masala

Spicy Mushroom Paneer Masala is quite healthy, quick Indian vegetarian dish that can be easily prepared at home. It’s not only a hit among my kids but my hubby loves it too.

Ingredients:

250 gms Paneer
250 gms Mushrooms
1/2 tsp Salt
1/4 tsp turmeric
1 small onion chopped
1/2 tsp cumin seeds
1/4 tsp mustard seeds
2 tbsp oil for cooking
2 garlic cloves
1 green chilli
1/2 tsp Red chilli Pwd (or paprika for less spice)
1 large or 2 small chopped tomatoes
1/4 tsp garam masala
3-4 stalks of Cilantro for garnish

Method:
1. Heat 2 tbsp oil in a pan and add cumin and mustard seeds. Give them 30 secs.
2. Add green chilli and garlic. After about a min, add onions.
3. Add salt, red chilli pwd and turmeric.
4. Fry for 3-4 mins. Add mushrooms and Paneer and mix well. Cook for 2-3 mins.
5. Add tomatoes and let them become tender. Add Garam masala and cilantro and serve hot with Roti or Naan.

Ingredients:
350 gms of pork
3 tbsp soy sauce
2 tbsp sesame oil
1 tbsp hoisin sauce
1-2 cloves of garlic
1 onion
1 tsp vinegar
1 tsp lemon juice
1/2 tsp salt
1 tsp red chilli flakes
1 tbsp sesame seeds
Sandwich bread of your choice
2-3 tbsp oil for cooking (Peanut oil, vegetable oil or olive oil)
2 tbsp Mayo
Cilantro for garnish
butter (optional)

Method:
1. Cut Pork Chops in long strips and Marinade with sesame oil, soy sauce and hoisin sauce for 15 mins.
2. Caramalize onions in one pan.
3. In another pan, add oil, fry thinly sliced garlic and add pork. Cook until both sides done. half way through flip the sides and sesaon with salt and red chilli flakes. Also add vinegar and lemon juice.
4. Top up Pork pieces with sesame seeds.
5. Toast the bread, add some mayo and assemble the sandwich- Pork, caramalized onions and cilantro leaves. Enjoy!

Tofu Scramble Recipe – Quick, Healthy weeknight meal

Tofu Scramble Recipe

Want to prepare Tofu in a healthy, vegan, gluten free Indian way? Try this Indian vegetarian Tofu recipe which is easy, quick and nutritious. Tofu scramble can be enjoyed with roti, paratha or filled in sandwiches, wraps etc.

Ingredients:
350 gm Tofu
1 small onion
1/2 tsp cumin seeds
1/4 tsp mustard seeds
2 small tomatoes
2 tbsp oil
1/2 cup green peas
1/2 tsp garam masala
1/2 tsp Red chilli pwd (or paprika)
1/4 tsp turmeric
1 to 1/2 tsp salt (adjust per taste)
1 tsp ginger-garlic paste
Green chilli (optional)

Method:
1. Heat 2 tbsp oil in a wok.
2. Add cumin and mustard seeds and give them about 30 secs.
3. Add onions, ginger -garlic paste and other spices (except garam masala). Cook for 3-4 mins.
4. Scramble Tofu (break in small pieces) and add in the wok. Mix well and let cook for 2 mins so that it soaks in all the spices.
5. Add in 1/2 cup peas and cook until almost done.
6. Add chopped tomatoes. Cook for 2 mins and add garam masala. Mix well and serve your dish hot with Roti or paratha.

Easy Lamb Rogan josh Recipe

Learn how to prepare Lamb Curry at home Indian style called Lamb Rogan Josh. This flavourful dish is mild in taste yet flavorful and aromatic. A must try dish for all Lamb meat Lovers, best when served with rice or naan.

Ingredients:

350 gms Lamb
3 tbsp Yogurt
1/4 tsp Salt + 1/2 tsp salt
1/2 tsp curry powder
1 tsp ginger-garlic paste
2-3 tbsp oil
1 tsp paprika
1 cinnamon stick
1 bay leaf
1 black cardamom
2 green cardamom
1 chopped onion
2 tomatoes (Pureed)
1/4 cup Red Bell pepper (I love to use them as they give a good bite to the curry and enhance the color)
1/4 tsp nutmeg
10-12 tsp saffron strands
Cilantro leaves for garnish

Method:
– Marinade lamb pieces with yogurt,salt, curry powder and ginger-garlic paste for at least 30 mins. Overnight would be best.
– When you are ready to cook, heat 2-3 tbsp oil in a pan and saute cinnamons tick, bay leaf and cardamoms for 2 mins. Add onions and fry for 3-4 mins.
– Once onions start changing color, add puree of two tomatoes, salt and paprika. Cover the pan and cook for 5-6 mins.
– Check to see if your masala paste is ready. Oil will be oozing out and tomatoes would have reduced in volume. Now add the lamb and brown for 2-3 mins. Add Red Bell pepper.
– Mix thoroughly. Add Saffron and nutmeg. Next, add 1/2 to 1 cup of water depending on how thick or thin you want the gravy.
– Once the water comes to a boil, simmer lamb further for 3-4 mins. Lamb Rogan josh is now ready. Garnish with cilantro leaves and serve hot with naan, roti, paratha or rice.

How to prepare chickpea curry in the slowcooker/crockpot?

It’s wonderful to have a few good crockpot recipes on hand for busy holidays or for when you are too tired to make anything elaborate.  Here is a healthy and delicious chickpea curry recipe that you can make in your slow cooker.

Ingredients:
3 cups Chickpeas (Uncooked)
1 onion
2 tomatoes
1 green chilli
2 tbsp ginger garlic paste
2 tsp Salt
1/2 tsp Turmeric
1/2 tsp Garam Masala
2 tsp curry powder
5-6 stalks of Cilantro
2 tbsp oil
1/2 tsp cumin seeds

Method:
1. Soak chickpeas in water overnight or atleast an hour.
2. Discard the water and get your crockpot ready.
3. Place chickpeas in your slowcooker and add 8 cups of water. Add salt, turmeric and garam masala.
4. Prepare Tadka/Tempering by sauting onions, ginger garlic paste in 2 tbsp oil flavoured with cumin seeds. Add tomatoes and saute for 3-4 mins. Add Cilantro leaves and thoroughly mix.
5. Pour these tadka over chickpeas and add 2 tsp Curry powder.
6. Let the chickpeas cook overnight or all day (atleast 4-5 hrs on high or 8-10 hrs on slow)
7. Once the chickpeas are ready, serve with Rice or Naan.

Almond Cashew Cookies- Christmas Cookies Recipe

Have you been invited to a holiday party? Well, here is an amazing Christmas cookies recipe which you can try and then take these yummy cookies for the host/hostess. They are easy to make and perfect for sharing.

Ingredients:
1.5 cup All purpose flour
1/2 tsp baking powder
1/2 cup powdered sugar
Pinch of salt
1 egg
1/2 cup oil
1 tsp Vanilla essence
1/2 cup chopped almonds and cashews

1. Preheat the oven at 350 F and line the baking sheet with parchment or foil.
2. Mix the first four dry ingredients together. Mix egg, oil and vanilla essence.
3. Mix the dough and add dry fruit. You can let the dough set or simply put it on the baking tray.
4. Bake for 15-18 mins. Edges will turn brown. Let the cookies cool on a wire rack.

Now prepare a cup of Chai Tea Latte and enjoy with these fresh homemade cookies or wrap them in a gift wrap and present them to your friends!

How to make Spiced Pumpkin Muffins- Thanksgiving recipe ideas

Spiced Pumpkin Muffins

Learn how to make spiced pumpkin muffins at home. These are easy to make, healthy, super moist and delicious. I flavoured them with Cardamom powder, nutmeg and cinnamon. Addition of oats, whole wheat flour and fresh pumpkin puree makes them fiber rich.

Ingredients:

1 Cup whole wheat flour
1/2 cup rolled oats
1/2 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp cardamom pwd
2 eggs
1/2 cup sugar
1/3 cup oil
1.5 cup pumpkin puree
3/4 cup plain yogurt (Mine was thick so I whisked it with some plain milk)

Method:
1. Bake sugar pumkins at 350 F for 50-60 mins. Once they are done, let them cool down and scoop out 1.5 cup pumpkin puree.
2. Combine whole wheat flour, all purpose flour, oats, baking pwd, baking soda, salt and spices.
3. In another bowl mix pumkin puree with sugar, oil, eggs and yogurt.
4. Fold wet ingredients with dry ingredients and pour the batter in a muffin tray lined with baking cups.
5. Place the baking tray in the oven preheated at 350 F and bake for 20-25 mins.

Serve fresh with Chai Latte. These muffins will stay good in the fridge for upto 5 days or can be frozen for upto 3 months.

Desi Chicken Fry Recipe

Chicken Fry recipe

Learn how to make tasty and easy Chicken fry at home. This dish can be enjoyed with Naan, Roti or over rice.

Ingredients:

400 gms Chicken
1 small chopped onion
1 tsp salt
1 tbsp Curry Powder
2 tbsp Lemon juice
1/2 tsp Garam Masala
2 small chopped tomatoes
1 inch piece of ginger
2 cloves of garlic
(above two ingredients can be substituted by using 1 tbsp Ginger- garlic paste)
Cilantro for garnish
2 tbsp oil for cooking
2 bay leaves
1 Cinnamon stick
1 black cardamom
2 cloves

Method:
1. Marinade chicken with Curry powder, 1/2 tsp salt and 2 tbsp lemon juice. Set it aside for 20 mins.
2. Heat oil in a pan and add Bay leaves, Cinnamon, cloves and black cardamom
3. Give spices about 30 secs and add onions, ginger, garlic and 1/2 tsp salt. Saute for 3-4 mins.
5. Ad din chicken pieces. fry until sealed or white form outside. Add in tomatoes and cover and cook for 10-15 mins or until chicken is done.
6. Add in garam masala and cilantro.
Serve with Naan or Rice!
